Chicken Tostadas

Ingredients

  1. 1 whole rotisserie chicken
  2. 2 cups shredded romaine lettuce
  3. 1 tablespoon olive oil
  4. 1 tablespoon red wine vinegar
  5. Salt and freshly ground black pepper
  6. 8 store-bought tostadas
  7. 1 cup refried beans
  8. 1 avocado, sliced
  9. 1/2 tomato, finely chopped
  10. Mexican crema, for drizzling
  11. Queso fresco, crumbled
  12. Pickled jalapenos, optional

Instructions

  1. Cut the chicken breasts and legs off of the whole chicken. Remove the skin. Shred the chicken off the bone and set aside in a bowl. 
  2. In a separate bowl, dress the romaine lettuce with olive oil and vinegar. Season with salt and pepper.
  3. To assemble the tostadas, spread 1 tablespoon refried beans onto a tostada. Top with 1/2 cup shredded rotisserie chicken. Top with the dressed romaine lettuce, tomato and avocado. Drizzle with Mexican crema and top with crumbled queso fresco. Finish with pickled jalapeno peppers if desired.

Loved this! It’s so quick and easy, perfect for a weeknight. Yet, it’s not at all lacking in flavor. The oil and red wine vinegar on the lettuce gives it a nice touch and really brightens it up. I will definitely make this again!

This was really good.  I made exact the first time and it was great.  Then I combined it with her other by making the tomatillo sauce sliced red onion and radish for a grown up version.  I still dressed greens with the oil and vinagar really good quick easy week night mexican.
