Peanut Butter Banana Pudding

Ingredients

  1. 5 ounces instant vanilla pudding mix
  2. 2 cups whole milk, hot
  3. 8 ounces whipped cream cheese
  4. 8 ounces whipped topping, such as Cool Whip
  5. 2/3 cup creamy peanut butter
  6. 1 cup heavy cream
  7. 2 tablespoons confectioners’ sugar
  8. 2 tablespoons bourbon
  9. 1 vanilla bean, scraped
  10. 2 bananas, sliced, for serving
  11. Vanilla cookies (vanilla wafers), for serving

Instructions

  1. Combine the pudding mix and hot milk in a bowl and whisk until smooth. Set aside. Beat the cream cheese, whipped topping and peanut butter in a bowl with an electric mixer until smooth. Set aside. Whip the heavy cream, confectioners’ sugar, bourbon and vanilla bean seeds in another bowl until soft peaks form.
  2. Transfer each component to a separate piping bag and pipe into six glasses, layering each component. Top with the sliced bananas and cookies. Enjoy!
