Ree’s husband loves chocolate and her Dad loves chocolate, so this is the perfect dish for them both. It’s very chocolatey, very rich and very easy.
Level: Easy
Total: 1 hr 10 min
Active: 25 min
Yield: 4 servings

Ingredients

  1. Nonstick baking spray, for the ramekins
  2. 2 large eggs
  3. 1 cup sugar
  4. 2 teaspoons vanilla bean paste
  5. 1/2 cup cocoa powder
  6. 1/4 cup all-purpose flour
  7. 1 stick (8 tablespoons) salted butter, melted
  8. 2/3 cup heavy whipping cream

Instructions

  1. Coat the insides of four 6-ounce ramekins with baking spray and place them in a 9-by-13-inch casserole dish. Preheat the oven to 325 degrees F.
  2. Add the eggs, sugar and vanilla bean paste to a bowl. With an electric mixer, beat the mixture until light and fluffy, about 5 minutes. Sift in the cocoa and flour and fold in with a rubber spatula until just combined. Stir in the melted butter.
  3. Divide among the ramekins, then add hot water to the casserole dish, coming halfway up the sides of the ramekins. Bake until the edges of the puddings are set but the centers are gooey, about 40 minutes.
  4. Allow to cool for 10 minutes.
  5. Meanwhile, add the heavy cream to a bowl, then use a hand whisk to whip until light and soft peaks form.
  6. Serve the puddings in their ramekins with dollops of the fresh whipped cream.

This was so good, I couldn’t stop thinking about it. I’m not big on sweets other than ice cream, but this one satisfies my occasional chocolate cravings, and it’s so easy!

Recipe says bake at 325 but the episode said 425. Which is correct?
Lindsay Cameron
Bake at 325. Even regular brownies that aren’t gooey I usually bake at 350. I would think for the time specified in recipe that 425 would make them dry. Ina Garten has a very similar recipe and bakes at 325.

Watching this episode now and she says to cook at 425 degrees, recipe says 325 degrees? Which is correct?
