Chocolate Avocado Pudding

Ingredients

  1. Deselect All
  2. 4 ounces bittersweet chocolate, finely chopped
  3. 1 teaspoon instant espresso powder
  4. 4 very ripe avocados, peeled and pitted
  5. 1/3 cup honey
  6. 3 tablespoons cocoa powder
  7. 1 tablespoon almond or regular milk
  8. 1 tablespoon pure vanilla extract
  9. 1/4 teaspoon kosher salt
  10. Chocolate shavings, for garnish
  11. Fresh raspberries, for garnish

Instructions

  1. Bring a medium saucepan 1/3 full of water to a simmer over medium heat. Put the chocolate into a heatproof bowl, set it on the saucepan and turn off the heat. Let stand 5 minutes; stir the chocolate until smooth. Stir in the espresso powder. Cool to room temperature.
  2. Put the avocados, honey, cocoa powder, almond milk, vanilla and salt in a food processor and pulse until coarsely mixed. Add the melted chocolate mixture and process until very smooth.
  3. Spoon the mixture into 6 small dessert glasses and sprinkle chocolate shavings over the surface. Garnish with the raspberries.
  4. The pudding can be served immediately or covered tightly (without garnishes) and refrigerated for up to 4 hours.

So Gross!! I really wanted to like this, it looked delicious as she was making it. Couldn’t manage a 2nd bite. Threw it away.

Wow! This is the first dessert I have ever made that I immediately wanted to throw away! I always try to “hide” vegetables in things, for the extra vitamins. So I thought this wouldn’t be too bad, boy was I wrong! I wanted to like it so much, but it was terrible. It tasted like bittersweet covered avocado. I even added a little extra honey, and 2 tablespoons of sugar!

Best chocolate pudding ever? Made this for a friend’s family which includes two picky little boys. Didn’t tell anyone it had avocados in it until it had been devoured. The boys simply asked for more, dad, who dislikes avocados proclaimed it to be the best chocolate pudding he had ever eaten. It’s so thick and rich. Make sure you chill it a couple hours before serving as that really brings out the chocolate. It’s kind of an expensive recipe but so worth it.
