A mimosa is a drink consisting of sparkling wine and orange juice. Ree’s mimosa bar is a deconstructed version of the drink, with a variety of different fruit juices in pitchers and two bottles of fizz in an ice bucket, so that guests can choose their favorite flavors and make their own drinks.

You do NOT waste Champagne on mimosas unless there’s a open bottle leftover from the day before! I’m beside myself that she Champagne on the episode. At least the online recipe does also reference Prosecco.
