Sloppy Joe-Stuffed Peppers

Ingredients

  1. 3 large red, yellow or orange bell peppers
  2. 4 tablespoons extra-virgin olive oil
  3. Kosher salt and freshly ground black pepper

  5. 1 pound ground turkey
  6. 1 medium carrot, finely chopped
  7. 1 small onion, finely chopped
  8. One 6-ounce package white mushrooms, finely chopped
  9. 2 cloves garlic, finely chopped
  10. 2 teaspoons ground cumin
  11. 2 teaspoons smoked paprika
  12. One 14.5-ounce can fire-roasted tomatoes
  13. 1/2 cup ketchup
  14. 1 tablespoon Dijon mustard
  15. 1 tablespoon light brown sugar
  16. 1 tablespoon cider vinegar
  17. 2 tablespoons chopped fresh Italian parsley
  18. 1 cup grated Cheddar
  19. Corn chips, crumbled, for garnish

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Halve the peppers through the stems; remove the stems, seeds and membranes. In a 9-by-13-inch baking dish, toss the peppers with 1 tablespoon of the olive oil and 1/2 teaspoon salt, then arrange the peppers cut-sides up. Set aside.
  3. Heat the remaining 3 tablespoons olive oil in a large skillet over medium heat. Add the turkey and cook, breaking it up, until no longer pink, about 3 minutes. Add the carrots, onions, mushrooms and garlic and cook until the vegetables begin to soften, about 5 minutes. Season with the cumin, smoked paprika, 1/2 teaspoon salt and some pepper; stir to combine. Add the tomatoes, ketchup, mustard, brown sugar, vinegar, parsley and 3/4 cup water. Bring to a rapid simmer and cook until thickened, about 10 minutes.
  4. Spoon the filling into the pepper halves and sprinkle with the Cheddar. Pour 1/4 cup water into the bottom of the baking dish and tent with foil (so the foil is not touching the cheese). Bake until the peppers begin to soften, 20 to 25 minutes. Uncover and bake until peppers are very tender and the filling is browned and bubbly, another 15 to 20 minutes.
  5. Serve the stuffed peppers topped with crumbled corn chips.

I added some hot sauce to Jazz it up. I also added layer of cooked rice on peppers before adding the soppy joes and omitted chips on to.

Delicious. I added extra Dijon and taco sauce. Microwave the peppers for 2 minutes then bake in a sheet pan add scallions to top once baked.

Super good! Will make again. I didn’t have a carrot so I substituted 1/2 a shredded zucchini, worked great. Topped with sour cream! Really delicious

I didn’t have smoked paprika, but did have liquid smoke and used a teaspoon of that and omitted the paprika altogether and it still had that lovely smokey flavor. This turned out better than I expected.

I left the recipe the same and added yellow squash, jalapeño, onion powder, garlic powder, Worcestershire, hot sauce. It was not too sweet for me but make it to your liking. Absolutely will keep this one and make it again and again!!

Yep. Good Stuff. I changed it slightly to accomodate what I had on hand. Used Ground Pork, omitted tomatoes and added a little “whosyoursistersauce” Topped it off with Sweet Chili Doritos instead of Fritos. Super flavorful dinner.

Loved this recipe! I will keep it around for sure. I may omit or cut the brown sugar in half as it was sweet but oh so good! Just wish we had the nutritional facts for these great recipes.
