Ingredients
- 1 1/2 pounds petite tri-colored or gold potatoes
- 1 cup kosher salt
- 1/2 cup (1 stick) unsalted butter, melted
- 2 tablespoons chopped fresh chives
Instructions
- Bring potatoes, salt and 6 cups water to a boil in a 4-quart saucepan over medium-high heat, stirring occasionally to ensure the salt has dissolved. Lower to a simmer, then cook until potatoes are tender, 18 to 20 minutes.
- Pour the water and potatoes into a colander in the sink and leave to air-dry for 5 minutes; you will see the salt start to form on the outside of the potatoes.
- Transfer the potatoes to a serving dish, then pour the melted butter and sprinkle the chives over the top. Toss together, then serve immediately.

I made this for a dinner party of ten. I doubled the recipe and used the purple and yellow mini potatoes as suggested. It was truly so easy and so delicious and goes perfectly with just about any protein.
can you use regular gold potatoes and cut smaller?
I have made these numerous times now and I’m still amazed that they aren’t salty! This is the only way I so my potatoes now.
I’m making these potatoes tonight but I’m a little confused. When you watch the video, After the potatoes are drained in the colander, they are put on a sheet pan to dry out. When you read the recepie, that part is not even mentioned. I’m gonna do EXACTLY what Jeff Mauro does & dry them on a sheet pan.

Made them for dinner tonight for company and they were a hit. Couldn’t have been easier. Firm outside and creamy inside. Everyone wanted the recipe.
So easy. The potatoes are so creamy. I used some garlic confit in oil and butter to toss them. Will definitely be making these again.
