Ingredients
- 24 ounces golden peewee potatoes, halved if large
- 1 medium onion, halved and sliced
- 1/3 cup olive oil
- 1 tablespoon herbes de Provence
- 1 teaspoon kosher salt
Instructions
- Preheat the oven to 450 degrees F.
- Add the potatoes, sliced onion, olive oil, herbes and salt to a rimmed baking sheet. Toss well to coat evenly. If cut, arrange the potatoes so they are cut-side down on the baking sheet. Place in the lower third of the oven and bake until golden brown and the potatoes are tender, 25 to 35 minutes. Serve warm.

Herbs de Provence should go on just about everything. Made these last night to be a side for my Christmas Day Prime Rib. Delicious and so simple I also roasted some colorful carrots with a sprinkle of the HdP as well.
Try GZ’s turkey with a dry brine of Sumac and Herbs de Provence. You will be a fan of this spice forever.
I didn’t have an onion on hand, so I made without the onion. My family loved them even without the onion, although we will make them again without. I added carrots and cooked them the same way. Overall, a hit with the family. Simple, but looks special.
I thought the herbes de Provence would be too floral for my hubby, but we both agreed these were delicious!
