Yield: 4 servings

Ingredients

  1. Nonstick cooking spray, for the grill grates
  2. 3 to 4 large russet potatoes, cut lengthwise into 1/4- to 1/2-inch oval slices
  3. Kosher salt and freshly ground black pepper
  4. Garlic Oil, recipe follows
  5. 4 cloves garlic
  6. 3/4 teaspoon kosher salt
  7. 1 cup extra-virgin olive oil
  8. 2 tablespoons finely diced fresh chives
  9. 2 tablespoon chopped fresh parsley
  10. Juice of 1/2 lemon

Instructions

  1. Heat grill to medium heat and oil the grates with cooking spray.
  2. Add the sliced potatoes to a rimmed tray or baking dish. Sprinkle with salt and pepper on both sides. Pour 1/2 cup Garlic Oil over the potatoes and toss gently to coat. Add the potatoes to the hot grill, then brush with the remaining oil mixture. Grill, flipping the potatoes once, until golden brown, about 5 minutes per side.
  3. Mash together the garlic and 1/2 teaspoon salt with a knife or bench scraper on a cutting board until it is a paste. Add the garlic to a small saucepan with the oil, chives, parsley, lemon juice and remaining 1/4 teaspoon salt. Cook over medium-low heat until the ingredients have combined, 3 to 4 minutes. Use as a marinade for potatoes, brush on rolls before toasting or brush on proteins for extra flavor.

DANGER!!!!

Do not start grill and SPRAY COOKING OIL. Aerosol cans can explode if fire runs up the spray stream.

Instead, hold a wad of paper towel with tongs, dip in oil, and rub the grates. Much safer.

Pro tip: heat the grill for 15 minutes and then CLEAN THE GRATES.

All I have to say is weeknight rotation!! These came out beautifully and delicious. They were soft and pillowy inside yet crispy on the outside. Super easy and done in no time. Definitely making weekly during the summer months!

Delicious.  Due to oil, I cooked lower and longer on grill to prevent flare ups!  Will make again.  Thanks Kardea!

We followed instructions, fantastic results. Add sour cream better than baked.
