Fried Potatoes with Coriander Cayenne Mayonnaise

Ingredients

  1. 1/2 cup mayonnaise
  2. 1 tablespoon white vinegar
  3. 1 teaspoon ground coriander
  4. 1/2 teaspoon cayenne pepper
  5. Couple pinches salt
  6. About 20 grinds black pepper
  7. 2 cups vegetable oil, preferably canola or safflower
  8. 4 russet potatoes, peeled and cut into 1/2-inch thick wedges
  9. Salt
  10. Chopped fresh parsley leaves, for garnish

Instructions

  1. Make the mayonnaise by whisking together all the ingredients until fully incorporated. Transfer to a small serving bowl and serve as a side with the fried potatoes.
  2. Heat the oil over high heat in a large, heavy pot, such as a Dutch oven, until it reaches 375 degrees F. Carefully drop half of the potatoes into the hot oil and cook until nicely golden brown, about 8 minutes. Remove potatoes with a slotted metal spoon onto a plate lined with a double layer of paper towels. Season generously with salt and sprinkle with parsley. Serve the first batch and repeat the frying process for the second batch.

I made the french fries and mayo last night to have with hot dogs. Oh my goodness! It was wonderful! I made the mayonnaise again tonight to have with fried green tomatoes. Am making ithe mayo again tomorrow to have on hamburgers at our July 4th cookout. This one is a keeper!

I’m the cook in our family and my wife is allergic to a variety of foods, especially onion. This precludes her being able to eat ketchup with any potatoes or fried foods.

I only made the mayo from this recipe. We had BBQ’d a couple of ribeyes one night and I served them with salad and tater tots. I thought I’d try the mayo as a condiment for the tots and it worked out very well. It’s now a staple in our house.

Nothing beats fresh cut potatoe french fries and this Coriander Cayenne Mayo gives the fries a great kick as a side or snack, YUM!
