Crispy Bits Breakfast Potatoes

Ingredients

  1. Kosher salt and freshly ground black pepper
  2. 2 pounds red potatoes
  3. 1/4 cup olive oil
  4. 4 tablespoons butter, melted

Instructions

  1. Bring salted water to a boil in a medium pot. Add the potatoes and boil until nearly fork-tender (but not falling apart), about 15 minutes. Drain and allow to dry thoroughly, then cut into wedges.
  2. Heat the olive oil with the butter over medium-high heat in a skillet. Add the potatoes, sprinkle on some salt and pepper and pan-fry until golden brown and crisp, 10 to 15 minutes.

One of my dad’s favorite sides has always been fried potatoes and onions. No matter how good of a cook everyone said I was however, I was always a failure at this simple dish. I appreciate having some of these very basic dishes explained so I could do them better! My mom made them but I’m sure she never boiled the potatoes first, so that one step made a huge difference for me! I added chopped up onion to the pan while the potatoes were drying and finally got them just right!

Easy and delicious. I add coarsely chopped onion and red bell pepper to the hot oil/butter and cook until soft. Then add the potatoes.

I’ve also used russets, because that’s what I had. They’re really not the right potato for this but they’re ok.
