Black Truffle Fontina Cheese Baked Potato

Ingredients

  1. 2 russet potatoes, scrubbed
  2. 1/2 cup diced bacon
  3. 1/2 cup panko breadcrumbs
  4. 2 cloves garlic, finely minced
  5. Kosher salt and freshly ground black pepper
  6. 1/2 cup heavy cream, warmed
  7. 1/2 cup (1 stick) unsalted butter, melted
  8. 1/4 cup shaved black truffle, plus additional for finishing
  9. 1 cup shredded fontina cheese
  10. 2 tablespoons thinly sliced fresh chives

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Prick the potato skins all over. Bake the potatoes in aluminum foil wrappers until tender, about 45 minutes.
  3. Meanwhile, cook the bacon in a small saute pan over medium heat until crispy, 8 to 10 minutes. Remove the bacon from the pan, leaving the fat behind. Add the panko and garlic and toast until browned, 2 to 4 minutes. Combine with the bacon, draining any excess fat. Season with salt and pepper.
  4. Remove the potatoes from the foil while warm, and cut down the centers lengthwise without cutting all the way through; scoop the centers into a bowl.
  5. Mash the potatoes with the cream, butter and truffle. Season with salt and pepper.
  6. Preheat the broiler. Place the potato mixture back into the skins and top with the fontina cheese. Broil until the cheese is melted and bubbling, about 4 minutes.
  7. Garnish with the breadcrumb mixture, chives and more shaved truffle and serve.

Truffles are sold by the pound. How much weight to get 1/4 cup?

This looked amazing on TV.  What did I do wrong here at home?   A full stick of butter plus all of the other ingredients for just 2 potatoes?   VERY expensive mistake.  We tried to recover, but it just didn’t work.

These potatoes are nothing short of amazing.  They pair perfectly with a grilled steak. Easy to do ahead for a dinner party and your guests will be wowed!!  We do not have easy access to black truffle, so we substituted black truffle butter.  Wonderful!

1 whole hour for a baked potato, and black truffle, do i look like a french aristocrat!!!! my dog is hungry now!!!! microwave cooks 10^7 times faster!!!!! apparently Chili liked it so i give 2^2 rating and feel bad for GEOFFREY ZAKARIAN.
