Ingredients

  1. 5 pounds white boiling potatoes, cooked, diced and cooled
  2. 4 to 5 hardboiled eggs, finely chopped
  3. 1 cup chopped celery
  4. 1/2 cup sweet pickle relish
  5. 1/2 cup finely chopped onion
  6. 2 cups mayonnaise
  7. 2 tablespoons brown mustard
  8. 2 tablespoons sugar
  9. Salt and pepper

Instructions

  1. Place the potatoes in a large bowl. Add the eggs, celery, relish and onions. 
  2. Mix the mayonnaise, mustard and sugar in a small bowl. Slowly pour the mayonnaise mixture into the potatoes – don’t put it all at once – and mix together until moist. You might not use all of the 2 cups of the mayonnaise mixture (it depends on the potatoes). Add salt and pepper to taste.

I looked through every potato salad recipe on Food Network app and decided to go with this one and I am glad I did. I doubled the recipe for a family event and it turned out perfectly. reminded me of the potato salad I grew up with back in the midwest. Excellent recipe.

This is a really good “basic” potato recipe.  I followed the recipe and enjoyed it!  Next time, I think I’ll add bacon and snap it up a bit, but it will be my “start with” recipe in the future!

All I would change is how the sugar is added, next time I would put it in at the end like they did on the show, a bit at a time.

This is almost the same as the recipe I was taught by my mother. However, in my version, hold the sugar and add pimentos for color and horseradish for a nice bite!!
