Bacon-Ranch Potato Salad

This creamy potato salad is tossed with a tangy homemade ranch dressing, flavored with buttermilk and cider vinegar. Chilling the salad in the dressing really lets the flavor soak in. Toss with crisp, crumbled bacon before serving.

Instructions

  1. Cook 2 pounds quartered small red potatoes in salted simmering water until just tender, about 10 minutes; drain. Mix 2/3 cup mayonnaise, 1/4 cup buttermilk and 2 tablespoons cider vinegar in a large bowl; add 1 minced garlic clove, 1/2 cup chopped celery, 2 chopped scallions, 1 teaspoon sugar and salt and pepper to taste. Add the potatoes and toss, then cover and chill. Add 6 slices crumbled cooked bacon and toss again before serving.

This is similar to the way I’ve made my potato salad most of my life. The difference is in the dressing. For mine, I use dry mustard powder, mayo and sometimes a little sour cream and pickle juice. I add chopped dill, and sometimes sweet pickles. Can’t wait to try this one.

Very tasty! My husband don’t like most condiments, pickles, olives etc. I put more garlic,bacon & make my own buttermilk since it requires so little. For the buttermilk think it’s 1 cup whole milk (I use 2% to 1-2tbs vinegar let it set for 5 mins. This one is a keeper & with family gatherings hubby gets his own potato salad. :

Awesome – very tasty and simple. The buttermilk and apple cider vinegar gave it a great tang. I used a little less than 1 tsp of sugar and little less garlic. No one in my family really likes potato salad but we all loved this one. I have tried all sorts of fancy potato salads in the past and none were as good as this simple potato salad. It will definitely become our family’s signature potato salad.

Excellent and easy go-to recipe that is just unique enough to stand out at a party, but not too “weird” tasting to potato salad lovers. HUGE hit for my Memorial Day picnic. Needs a good amt. of salt to really make the flavors pop. I also used a bit more bacon than called for. Will definitely make again and again!
