Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh minced rosemary leaves
- 2 ounces diced pancetta
- 1 (28-ounce) can crushed tomatoes
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups Tomato Sauce
- 2 cups diced roasted chicken
- 2 cups broccoli cut into small, bite-sized pieces
- 1 1/2 cups diced mozzarella cheese
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 pounds pizza dough
- 1/3 cup olive oil
- 6 tablespoons grated Parmesan
Instructions
- Special equipment: 6 (10-ounce) ramekins
- For the Tomato Sauce: Warm the olive oil in a small saucepan over medium heat. Add the garlic, rosemary, and pancetta. Saute until the pancetta is crisp and golden, about 5 minutes. Add the tomatoes, stir to combine, and simmer over very low heat for 15 minutes. Add the salt and pepper. Set aside.
- Preheat the oven to 400 degrees F. In a large bowl combine the Tomato Sauce, chicken, broccoli, mozzarella, salt, and pepper. Stir to combine. Divide the chicken mixture evenly between the ramekins. Roll out the pizza dough and cut circles with a pairing knife that are 1-inch wider in diameter than the ramekins. Place the circles of dough over the filled ramekins and press down to seal, making sure to pull the dough over the edge of the ramekin. Brush the top of the pizza dough with olive oil and sprinkle with Parmesan cheese. Cut a small slit in the top of the pizza dough with a pairing knife. Bake until the pizza crust is golden, about 25 minutes. Remove from the oven and let cool slightly before serving.

This was okay at best. My 22 year old son said “ you took the best part of the pizza out”
Sounded good but I just HAD to make my own adjustments. Removed Broccoli and added spinach for a green vegetable. Added pepperoni and mushrooms to filling. For sauce I had to add basil, oregano and pepper flakes for good flavor along with a little sugar bc I like my pizza sauce a little sweet. I used large ramekins so I put the dough inside than filled with mixture. Covered and also sprinkled with a dash of garlic salt on top dough covering. But it was a very good foundation recipe.
Made this recipe for some friends when it first came out. A couple of years later, one of them is in a group of people describing how she still to this day thinks of that meal as one of her all time favorites.

This was a great recipe for a large family. There are only 2 of us, and I couldn’t do the math to make just two. It woud be so helpful if these recipes could give a break-down for 2 or 4 servings. Giada, you are great. I’m 75 yrs. old and have made a lot of your dishes, but I would sure like to be able to make them for just 2 people. Thankx

I decided to make this with my two grandsons. It was lots of fun to do! And everyone really enjoyed eating it, including my husband!
Made this tonight and it was just okay for me. It was not bad, but not something I would crave to make again. The sauce was excellent, broccoli could have been pre-steamed a little and it needed just a little something more. Something fun and different to make, but not a gotta keep the recipe kinda meal.

I made this dish with my boyfriend who will eat just about anything, but he didn’t quite finish this home made pizza pot pie. Which translates to ‘meh’. He’s not exactly a chef, but me being a foody didn’t care for the upside-down, dough on-top pizza concept, either. I thought pizza + pot pie, how could this possibly go wrong!? Well, I can’t put my finger on it, but it didn’t go right. The homemade tomato sauce, however, was the best I’ve ever had!!! I loved it so much I’m stealing the recipe to use for pasta dishes from now on.
