Wined and Dined Mushroom Pork Chops

A simple keto dinner made with chicken thighs, bacon, and ranch cheese sauce in the Instant Pot. Serve with more bacon and Cheddar cheese on top of mashed potatoes or cauliflower rice, as desired.

Ingredients

  1. ¼ cup butter
  2. 2 cups coarsely chopped white button mushrooms
  3. 1 cup finely chopped red onion
  4. 1 cup white cooking wine
  5. 2 tablespoons chopped fresh parsley
  6. garlic powder to taste
  7. salt and ground black pepper to taste
  8. 4 (8 ounce) center-cut boneless pork chops, trimmed
  9. ½ cup sour cream (Optional)

Instructions

  1. Melt butter in a large skillet over medium-high heat. Add mushrooms and onions; cook until tender, about 3 minutes. Add wine, parsley, garlic powder, salt, and pepper; cook until flavors combine, about 1 minute.
  2. Reduce heat to low; add pork chops and spoon some mushroom mixture on top. Cover; simmer until pork is slightly pink in the center, about 25 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove chops from skillet and keep warm.
  3. Stir sour cream into the sauce in the skillet. Increase heat to medium-high; cook and stir until well blended and hot, about 3 minutes. Spoon sauce evenly over each pork chop.

I really wanted to like this dish, but it was just okay. Needs more spice. Maybe some rosemary? I dredged the chops in flour and browned them first, as suggested in another comment. Also hoped the flour would help thicken the sauce, but still had to cook it a bit longer to reduce the sauce. I would not make this again.

Delicious! Very rich and flavorful sauce. The only thing I did differently was season the chops with salt and pepper, and I’m glad I did. Otherwise I followed the recipe exactly. The only changes I’d suggest is to brown the chops first for an added layer of flavor, then add the mushrooms and onion and proceed with the recipe. I’d also suggest reducing down the sauce at the end for about 5-10 mins
