Ingredients
- 4 (1 inch thick) boneless pork chops
- 2 medium sweet potatoes, peeled and sliced 1/2 inch thick
- 1 medium onion, sliced
- 2 apples – peeled, cored and sliced
- 1 tablespoon brown sugar
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- freshly ground black pepper to taste
- 1 (16 ounce) can sauerkraut, drained
Instructions
- Heat a skillet over medium-high heat and coat with cooking spray. Quickly brown the pork chops on each side. Set aside.
- Arrange sweet potato slices in the bottom of a 3 to 4 quart slow cooker. Cover with the onion slices, then the apple slices. Sprinkle brown sugar, nutmeg and salt over the apples, and grind a little pepper. Place the pork chops on top of the pile, and cover with sauerkraut. Cover, and cook on Low for about 5 hours. It can go an extra hour without drying out though.
- Serve pork and vegetables with juice from the slow cooker spooned over them.

Great recipe. My husband, who is not a pork chop lover, agreed we should do it again! This time I followed Sarah’s suggestions and added some Sauvignon Blanc on top of veggies and caraway seeds to the sauerkraut, which I rinsed first. Only thing I will do different next time is sprinkle the seasonings on top of veggies AND on top of the pork chops since all the flavors seemed to have been in the veggies. The chops seemed a bit bland. Also need to put on high for an hour before switching to low. Potatoes not quite done. Great all around combination.
My husband loved this! He always requests pork chops with sauerkraut which I find boring. The addition of the apples and sweet potatoes made the dish exceptional. I had the pork chops thawed and started searching for recipes too late to cook in the crockpot so cooked the potatoes in a microwave dish for 8 minutes. I combined the sauerkraut, apples and rest of the ingredients, then added on top of the potatoes. I seasoned the pork chops and placed them on top. I popped the covered casserole into the toaster oven out on the patio to avoid heating up my house on the 98 degree afternoon. An hour later we enjoyed the fabulous dish. Thanks
Very tasty, even without the nutmeg. I added a quarter cup of water and a tsp. of butter, so I would not risk it being dry. I also added diced carrots. Yum! I took my picture after we are half of it already
I liked the flavor of the sauerkraut, sweet potatoes, apples, and onion. However, the chops were a bit dry. This was surprising to me because crockpot meat is usually pretty moist. Does anybody have any thoughts about how to make the chops juicier? They were fork tender, just a bit dry.
What a waste of pork loin. Why use pork loin at $2.99/lb when it would be better using pork shoulder at $0.99/lb?
I did some changes because of what I had. Swopped out Pork for Beef Shoulder Roast. Deleted Sugar and Sauerkraut. Added another small onion, turmeric, basil, Thyme, 3 cloves of garlic, 1/4 cup of red wine, coconut oil, Ceylon cinnamon, and 3 small carrots.
I tried making this recipe without the sauerkraut, because I don’t care for it. I did add white wine as several suggested, but the meat was very dry, almost inedible and a waste of good pork chops. The sweet potatoes and apples were fantastic. If I were to make it again I would put the meat on the bottom and perhaps use broth and wine to make sure the meat doesn’t dry out.
Sweet potatoes needed longer to cook. Was not a fan of the taste….
After sightly browning in the pork chops in a pan, I cooked them in a covered stoneware pot 375 deg. oven for about 45min to one hour. I cooked the apples separately and added them later to the dish because I don’t like it when apples taste like the rest of the dish instead of apples. I did not drain the canned sauerkraut because I thought it needed the extra juice. Pork chops came out super tender!
made a few changes, no onion, switched sweet potato for butternut squash, cooked it in a Dutch oven, 375 for an hour, 300 for an hour. browned the pork chops and squash, layered it in a Creuset and popped it in the oven. really tasty!
Meh. Pork was tough, apples melted away, sweet potatoes yucky, sauerkraut and onions just okay.
I think this turned out great! I baked a 2.5# pork loin @ 325• until an internal temp. of 145• and allowed to rest. Tender and flavorful. Put loin in a cooking bag and added 2 sliced apples, canned yams, 1/2 onion, 3 red potatoes (cut in 1/4’s). Rolled everything in brown sugar and nutmeg (including the pork). Plan on using whatever leftovers for some pulled pork!

The sauerkraut didn’t sweeten up, and this had a slightly sour/tangy flavor that I didn’t find appealing or appetizing. My family agree that the chops were tender but 4 out of 5 of us didn’t care for the recipe. I won’t make it again.

Made the recipe without saukeraut because my husband doesn’t like it and it was still delicious. I added 1/2 cup of white wine like someone suggested and made it juicy.
I have made this twice just as the recipes said. This to me is a comfort food. Love, Love it. I fixed the first time and invited my sister and brother-in-law over. He claimed he hated sauerkraut, so I told him he didn’t have to eat that part. He decided to try it, and was hooked. He even got seconds.

Everything was mushy. Tasted OK, but I was disappointed. Lots of liquid. Only put in 1/2 cup of water.
Not a favorite. The flavor just wasn’t there. I’ll tweek it a bit to fit my family’s taste.
