Pineapple Pork Chops

Ingredients

  1. 1 tablespoon olive oil
  2. 4 boneless pork chops
  3. 1 (14.5 ounce) can chicken broth
  4. 2 tablespoons soy sauce
  5. 1 tablespoon vinegar
  6. ½ cup pineapple juice
  7. 2 tablespoons brown sugar
  8. 2 tablespoons cornstarch
  9. 1 (15 ounce) can pineapple chunks, drained (Optional)

Instructions

  1. Heat oil in a skillet over medium heat. Sear pork chops in the hot skillet for 5 minutes per side. Transfer chops to a plate.
  2. Add broth, soy sauce, and vinegar to the skillet; bring to a boil. Return chops to the skillet, reduce the heat, and simmer until no longer pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Turn off the heat; transfer chops to a plate and keep warm. Leave cooking liquid in the skillet.
  3. Stir pineapple juice, brown sugar, and cornstarch together in a bowl.
  4. Pour pineapple juice mixture into the skillet and mix with cooking liquid. Cook over medium-low heat, stirring occasionally, until sauce comes to a boil and thickens slightly. Add pineapple chunks and cook until heated through, 1 to 2 minutes. Serve sauce with chops.

Its mostly personal preference. I was looking for a glaze with a brighter flavor. more fruit less chicken broth. I think the next time I will substitute pineapple juice for chicken broth and add a little lemon juice.

Glaze was awesome….I can see using this glaze with a lot of different recipes….great meal and even my biggest critic, my mom, loved it….pineapple is definitely a crowd pleaser….I will use this glaze with spare ribs no doubt….I chose garlic mashed potatoes for a side and there were no leftovers….

I wasn’t a huge fan of this recipe ,but honestly you just have to season it to your own personal taste. Make sure you taste the sauce before you thicken it. The thickening agent will make it sweet so think about the sugar to salt ratio and also consider what you’re envisioning it will taste like and adjust accordingly. It could use some garlic and onions for sure to make it pop , maybe even a little extra salt or soy sauce but that’s just me personally. If you’re a huge fan of pineapple , the pineapple taste is there but it is not dominant . I also recommend adding pineapple chunks to your sauce.

Instead of pork chops, I used some pork that I had cut up for Kabobs. It worked well. I also added waterchestnuts for that crunch, and a teaspoon of ginger for a little snap.

cooked longer in vegetable broth instead of chicken… I had no thickener handy so I skipped the cornstarch. used a few packets of soy sauce and a little more brown sugar. I used the juice from pineapple can but not the pineapples. Also added a little red pepper. Great with rice

We loved this! I added some pineapple chunks per the other reviewers’ advice, and also seasoned the pork with salt, pepper, and garlic powder before browning it.

I did a light sprinkle of garlic powder on each chop. After the sauce thickened, I added 2 pineapple rings per chop to the sauce, topped with the chops, and warmed for 5 extra minutes. DELICIOUS! I served this over white rice.

I read all the reviews first but unfortunately the suggestions didn’t help. Even my own changes didn’t seem to make a difference. Very bland. Not sweet enough. For some reason you can’t even taste the pineapple. Tough, even though I soaked them in Kosher salt for three hours prior to cooking. I wouldn’t use this recipe again. Sorry!

This is my new favorite way to prepare pork chops. The chops come out moist and tender and the sauce is delicious on the rice. I added some pineapple chunks to the sauce and it was the perfect addition.

I used coconut oil to brown the meat instead of olive oil and cubed the boneless porkchops instead. I used only half of the amount of soy sauce. It was really good. I also used only a half a cup of pineapple juice and put chunks of pineapple in the mixture. Would definitely make this again!
