Ingredients

  1. 15 cloves garlic, finely chopped
  2. 1 fennel bulb, finely chopped
  3. 1 bunch fresh basil
  4. 2 tablespoons crushed red pepper flakes
  5. 1 tablespoon cumin
  6. 1 tablespoon coriander
  7. 1 tablespoon anise powder
  8. 1 tablespoon ground black pepper
  9. 1 tablespoon salt
  10. 5 pounds ground pork

Instructions

  1. Combine the garlic, fennel and basil in a food processor and puree. Add the red pepper flakes, cumin, coriander, anise, black pepper and salt and keep mixing until well combined and no chunks remain; you can add a little water to help the mixing process if needed. This is your seasoning and fennel mixture.
  2. Put the ground pork in a wide pan with the seasoning and fennel mixture and mix well by hand. Place over medium heat and cook, stirring throughout and mixing with a spoon or potato masher, until fully cooked, about 20 minutes. Remove from the heat. Continue to stir and mash/chop up the meat while cooling, about 15 minutes. Strain.

Not good. No cumin or coriander in Italian sausage. He made a pizza with this sausage that was utterly disgusting. So tired of all these hipster joints trying to make pizza with all these wild concoctions. Even his sauce was not made right. If my master pizza maker relatives in Italy came here and saw this they would laugh their heads off.
