Honey Apricot Pork Chops

The crumb on these rolls is really solid, and they are nicely chewy. quite pleasing.

Ingredients

  1. 4 boneless pork chops
  2. kosher salt and freshly cracked pepper to taste
  3. 1 tablespoon olive oil
  4. 2 tablespoons honey
  5. 4 fresh apricots, pitted and cut into wedges
  6. 3 cloves garlic, minced, or to taste
  7. 1 teaspoon chopped fresh parsley

Instructions

  1. Pat pork chops dry with paper towels, then sprinkle both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Add chops and brown well, about 5 minutes per side. Stir in honey, apricots, and garlic; cover and simmer until pork is tender, about 8 minutes. An instant-read thermometer, inserted into the center, should read at least 145 degrees F (63 degrees C).
  3. Serve chops topped with apricots and pan juices. Garnish with parsley.

Fresh apricots are just coming in season so I bought them a few days ahead to ripen. We love apples with pork but the apricots were a delight as well. This is easy and would be a great company dish when you don’t want to fuss all day in the kitchen!

We really loved this! Don’t let the paper plate fool you — this is a classy dish! I used fresh apricots but first put the sauce ingredients on a saucepan on low for about 15 min to get the fruit with the honey and garlic to blend together. I then sautéed the chops 4 min on one side and 3 on the other, added the warmed sauce to the pan and removed from heat and covered for 10 min. Chops were perfect!

I didn’t have fresh apricots either so I used canned, drained but saved the juice and added a little of it to the end to make more juices for the rice to soak up. I also added a little cayenne to one side of each chop to give it some kick…sweet and spicy over rice and served with asparagus. This a keeper for sure. It’s easy, pretty quick to fix and delicious. My guys loved it.

I used thick pork chops and it took a bit longer. The recipe did not specify what size. I loved it when I cut them thin and soaked them in the juice. I would add more honey and didn’t have fresh apricots so I used canned. Pat dry them & used the whole can & glad I did.

I don’t usually eat pork so must admit I had trouble getting the cooking times correct. First time it was too pink inside so gave it 2 more minutes which then overcooked it. Anyway the savory flavors just weren’t there. I used fresh very ripe apricots and followed recipe exactly. Won’t make it again

This was awful. I used boneless center cut pork chops and they came out tough. A total waste.

This is easy to prepare and tasty. I followed the recipe exactly. It says to add the apricots, garlic and honey and mix with the pork chops. I mixed them together first and then poured the mixture over the chops but allowed some of it to drip onto the bottom of the pan. The times given worked perfectly for me. The chops were tender. I paired them with asparagus roasted in olive oil and balsamic vinegar and it was a pleasing combination. I’ll make this again.

Yes, after reading reviews I included many of the suggestions. No fresh apricots available, so substituted both preserves and canned apricots. I only had mango infused honey which I think only added to the yumminess. A big deviation was the addition of tamari, low sodium version and a small slurry of cornstarch to thicken up the sauce. We all loved it. Quick and easy.

This was good, but the chops were a little dry we thought… next time I’ll make this in the slow cooker. I used about 4 tbsp. of apricot preserves instead of the apricots.

I made this and it was successful. The store didn’t have fresh or even canned apricots, so I substituted two cans of fried apples in syrup. Because the syrup already had sugar, I left out the honey. Otherwise, I followed the recipe. I used 3/4″ boneless pork chops. My family complimented it. One person commented on the tenderness of the meat, and another said they initially thought it might be too sweet, but when they tasted it, it wasn’t. I would make this again.
