Grilled Lemon Herb Pork Chops

Ingredients

  1. ¼ cup lemon juice
  2. 2 tablespoons vegetable oil
  3. 4 cloves garlic, minced
  4. 1 teaspoon salt
  5. ¼ teaspoon dried oregano
  6. ¼ teaspoon pepper
  7. 6 (4 ounce) boneless pork loin chops

Instructions

  1. In a large resealable bag, combine lemon juice, oil, garlic, salt, oregano, and pepper. Place chops in bag, seal, and refrigerate 2 hours or overnight. Turn bag frequently to distribute marinade.
  2. Preheat an outdoor grill for high heat. Remove chops from bag, and transfer remaining marinade to a saucepan. Bring marinade to a boil, remove from heat, and set aside.
  3. Lightly oil the grill grate. Grill pork chops for 5 to 7 minutes per side, basting frequently with boiled marinade, until done.

These pork chops were okay. I was looking for a marinade that didn’t include soy sauce, so figured I’d give this a try. Only marinating for a few hours. If I make again, I’ll try marinating them longer.

Yummy! I added a bit of dijon, honey, and Worcestershire. I know some people don’t like tweaks, but I do. I had two 1 1/2 inch thick boneless chops. I marinated them for about 4-5 hours and grilled them on the BBQ. Lovely. When weather isn’t good for grilling, cooking them in a cast iron pan on the stovetop is just as good!

We liked. Made exactly as directed, except left out salt and didn’t have enough marinade left to boil for basting.

This really is a great recipe. I only have one minor complaint, and that is the marinade time. The problem lies that after about 2 hours the acid in the marinade begins to cook the meat. The process is called denaturing. Marinades that contain citrus juices, especially lemon or lime juice, should be used for only 2 hours or less. Foods left too long in these blends can change color and texture.

Made as written and our pork chops came out very moist/tender. Marinated for 4 hours, but the flavors didn’t do much for us. I couldn’t get past the lemon flavor either. Rating of 3 stars as hubs didn’t have this lemon flavor issue, but he felt they were lacking in flavor overall. I rated it a 2, while he rates it a 3. Recipe is easy to make though and again…results in tender pork chops.

Very easy and simple – HOWEVER for those who are doing Whole30 – vegetable oil isn’t compliant. Substitute with your favorite approved oil such as EVOO or my favorite Avacado oil.

Nothing special. I love garlic, lemon and olive oil marinade for chicken. Does nothing for the pork chops and I bought nice thick ones for the BBQ
