Total Time: 1 hr 55 mins
Servings: 6
Yield: 12 pieces

Ingredients

  1. 4 bratwurst
  2. 3 (12 ounce) cans light beer
  3. 5 tablespoons brown sugar
  4. 1 teaspoon cayenne pepper
  5. 6 slices bacon, cut in half

Instructions

  1. Poke bratwurst several times with a small fork, and place into a saucepan with the beer. Bring to a boil over high heat, then reduce heat to medium, and simmer for 15 minutes. Remove the bratwurst from the beer, and allow to cool to room temperature.
  2. Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and place a wire rack on top.
  3. Toss the brown sugar and cayenne pepper together in a large bowl and set aside. Cut each bratwurst into three pieces, wrap each piece with half strip of bacon, and secure with a toothpick. Toss the bratwurst with the cayenne mixture to coat, then place onto the prepared baking sheet.
  4. Bake in preheated oven until the bacon is brown and crisp, 25 to 35 minutes.

Looks nice on paper. Will have to try again but followed directions to the letter and since says 25 – 35 minutes, put it in middle at 30. Everything burnt. Oh well. Live and learn.

Great Brat recipe. My family loves it. Instead of Cheyenne, I use Cajun seasoning in the same proportions which takes down the heat.

we will make these again

followed the recipe exactly except accidentally used a tablespoon of cayenne. it was awesome & very easy. coated bacon & brats in the mixture because it doesn’t stick well to either. Will make for a potluck. this is sure to be a crowd pleaser!

Not for the health conscious, but these were super easy and tasted great. I made the recipe exactly as written and did not find it too spicy.

Made in AIR FRYER and OMG…… these are so good! Followed directions with exception of after boiling had husband cook on grill. I then cut each brat into 4 pieces wrapped each with 1/2 strip bacon, secured with toothpick and placed in air fryer at 360 degrees for about 5-7 minutes. Loved the brown sugar/crushed red pepper coating as it added so much flavor. Thanks for this one will for sure make again.

Great recipe! Hit of the party

This was amazing. I made for a couple clients and they loved them. I used a whole piece of bacon though. This was fabulous.

These were good, but a little too spicy for my guests. I cut back on the cayenne pepper by a little, and next time I will only add half. I also ended up cooking them too long, but that was not the recipes fault, it was my own for not checking them at 25 minutes.

This was very good! This will be great for parties, football games etc. I used mustard for dipping. a great compliment to the very subtle sweetness of the brown sugar. A keeper recipe. Thank you for sharing : )

Delicious! I’ve brought them as an appetizer to parties 3 different times, and each time they were gobbled up! I used smoked paprika instead of cayenne. I also used apple brats I got at the butcher. Otherwise followed recipe exactly as written. Very very good. Thanks for sharing!

Oh my goodness, these were fantastic!! Followed recipe as written, but added a bit of smoked paprika. They were a bit spicy, but that’s something we enjoy, so add cayenne to taste. We used Coors Light because that’s what we had on hand. I could taste the beer, but my husband could not. Next time may follow other reviewer’s suggestion and use apple juice or apple cider or a darker beer.

I could eat these all day! Don’t change a thing!!!

I have made this recipe 10+ times in the last 3 years! My husband asks for it all the time and is always a hit at pot luck dinners or when we have guests over. Out of the different beers we’ve tried, Guineas Blonde has had the best turnout!

I followed other’s advice and cut back on beer and cayenne. I used two blueberry brats, one can of Stella, about a 1/4 tsp of cayenne, and 3 tbsp of brown sugar. I ended up throwing away some of the sugar/cayenne mix, so I could have reduced both by a third and been fine. I also cut the brat into 6 pieces and they were still huge bites. Granted, my brats were pretty big. Excellent recipe! Will be making again soon for gatherings and just for dinner for hubs and I.

I broiled mine for a few minutes afterward. It was great!

I reduced the cayenne to 3/4 tsp. Still very spicey but we like spice. My husband liked them but the rest of us did not. The beer flavour was very strong and I only used 2 cans of mild beer. Overall I would not make these again. If you love beer flavour, you may enjoy them

Delicious and easy. Always the first to go and I am always asked for the recipe. Make it, you won’t be disappointed!

I used enough water to cover the brats and added one can of beer (and drank one as well). I allowed the brats to soak in the beer mixture for 15 minutes before removing to cool. I also substituted the cayenne for smoked paprika which made a world of difference flavor wise. I am making them again as I’m typing this review to take to a tailgate party. Enjoy!

Made these for a Christmas party and they were a hit. I impressed everybody and when it comes to potlucks it’s fun to be the only one leaving with a clean dish. the beers I used were 2 dark pilsners and a couple of ambers. Turned out really well, definitely use thin bacon or it won’t cook all the way and have the desired texture.

These were easy to make and a crowd favorite! The only thing I altered was adding a little garlic to the brown sugar and cayenne. I cooked them at home then threw them in the oven at the party to warm & crisp them up. They leave a little warm tingle in the back of your throat and are full of flavor! I’ll definitely make them again.
