Simple Roasted Pork Shoulder

Ingredients

  1. 3 tablespoons olive oil
  2. 3 tablespoons chopped garlic
  3. Salt and freshly ground black pepper
  4. 1 (4 pound) pork shoulder

Instructions

  1. Preheat the oven to 425 degrees F.
  2. In a small bowl, mix together the olive oil, garlic, salt and pepper. Using a pastry brush, spread the mixture all over the pork shoulder.
  3. Set the meat on a rack set into a roasting pan. Roast for 20 minutes, and then reduce the heat to 325 degrees F. Continue to cook until an instant-read thermometer inserted into the shoulder reads 185 degrees F, about 4 hours. Remove the pork from the oven and let stand until cool enough to handle, about 30 minutes.

Soooo easy, but soooo good. My husband couldn’t stop eating it as he was cutting it up. The crispy crust was delicious. We cooked it with the skin side down. Will definitely be making this again and again and again!

So simple, so good. Made so many times with roasted carrots and potatoes. Do not cover. Works great with a pork picnic, pork shoulder or pork butt. This is not for a pork loin or tenderloin. Recipe. I would base cooking time at 185 degrees

I made this recipe today and it was so good, easy and perfect! This definitely will be my go to roasted pork shoulder recipe from now on! I roasted a 5 lb pork shoulder and it reached 185 degrees in 3.5 hours. Depends on your oven, I think. I think adding fresh rosemary to the coating mix would be good too! YUM!

This is a good recipe. Really easy to make. My 4 1/2 pounder hit 185d in about two hours, but still came out tender and moist. Maybe I will try it at lower temps next time, but hey, don’t mess too much with success.

for the rub I used a half head of garlic and added the oil and S&P by eye. Also threw in a tsp of cayenne, and a little rosemary, because the jars were just sitting there on the counter looking lonely. And because you only live once. Amarite?
