Ingredients
- 2 tablespoons garlic, minced
- 1 cup onion, minced
- 1/4 cup dry sherry
- 1 (18-ounce) can guava marmalade
- 1 (8-ounce) can tomato salsa
- 4 tablespoons dark corn syrup
- 3 tablespoons white vinegar
Instructions
- For the Guava Glaze:
- Combine all ingredients and simmer in a large saucepan for 2 hours at very low heat.
- For the Pork Loin:
- Season pork loin with Adobo and stuff with the garlic cloves. Bake in a preheated 350 degree oven for 18 minutes per pound. When meat is nearly fully cooked, baste with guava glaze and cook for another 5 to 10 minutes. Place on a serving platter.

This is a great way to cook pork tenderloin, and the sauce is just incredible.
The Pork Loin cooked perfectly. Normally, I cook them at a little higher temperature and it tends to dry out if not watched closely. This was perfect and the guava glaze was amazing! People were still calling the day after to talk about it and ask for the recipe!
I was looking for something different to make for my daughter?s engagement dinner/party. I found this recipe, I love guava but wasn?t sure how it would taste over pork loin. I was also afraid to try something new that the guests might not like so, I ended up making one with regular mushroom wine sauce and the one with the Guava glazed. Turns out, I received a lot of complements on the Guava Glazed, it was a big hit! They hardly touched the other gravy were asking for the recipe.
Although it takes a few hours to cook, the taste is wonderful.
My guests enjoyed and requested the recipe.
