Ingredients
- 3 3/4 cups water
- 1/4 teaspoon salt
- 1 (8.8-ounce) package quick cooking polenta
- 1/4 cup grated Parmesan
- 2 teaspoon dried thyme
- 1/4 cup white chocolate chips
Instructions
- In a large saucepan combine water and salt. Bring to a boil.
- Turn down the heat to low and add polenta in a slow steady stream, whisking constantly. When polenta is incorporated switch to a wooden spoon and continue stirring until thick.
- When mixture is thickened remove from heat and stir in and cheese, thyme and white chocolate.

Ultra-nauseating.
I don’t have to make this to determine what’s wrong with it. Thyme and any chocolate don’t mix well. This would have been better with spices like perhaps a combination of cumin and cinnamon. Just because almost everyone has dried thyme in their cupboard doesn’t mean it’s good with everything. Most of us have cinnamon, too. And cumin isn’t uncommon.

It was awful. Tasted one bite and threw out the whole batch.
I thought the chocolate gave the polenta a nice creamy texture with a mellow sweetness. It was similar to sweet cornbread. Maybe I never realized I don’t care for Thyme before I made this recipe. I do keep it in the cupboard. It was just such a harshly bitter contrast to the sweet smooth harmony created by the rest of the dish. I would try this again without the Thyme.
