Fried Polenta

Instructions

  1. Cut one 18-ounce tube polenta into 1/2-inch-thick rounds. Heat 1/4 inch of vegetable oil in a large nonstick skillet over medium-high heat. Coat the polenta in flour and fry in batches until golden brown, 3 to 4 minutes per side (add more oil if necessary). Drain on a rack; sprinkle with salt and grated parmesan.

This was my first time ever using Polenta. It was fantastic. Used olive oil, and it fried up nicely. Served as a side with Jeff Mauro’s Pammie’s Braciole. A very good pairing. Publix didn’t have flank steak, so I picked up thin sliced sirloin. Had to use two pieces, but it worked ot fine. Also halved the recipe, to make for two, and it was perfect.
