Creamy Sweet Potato Polenta

Ingredients

  1. 2 large sweet potatoes, peeled and cut into 1-inch pieces
  2. Kosher salt
  3. 2 cups heavy cream
  4. 3/4 cup polenta
  5. 2 teaspoons garlic powder
  6. 1/4 cup grated Parmesan
  7. Freshly ground black pepper

Instructions

  1. Add the sweet potatoes to a large pot, cover with water and add 1 tablespoon salt. Bring to a boil over medium-high heat and cook until the potatoes are easily pierced with a knife, 10 to 15 minutes. Drain and puree the potatoes in a food processor until smooth.
  2. Bring the heavy cream and 2 cups water to a simmer in a saucepan over medium heat. Slowly whisk in the polenta and garlic powder. Reduce the heat to low and continue to cook, stirring occasionally, until the polenta is smooth and cooked through, about 15 minutes. Stir in the sweet potato puree and cheese until well combined. Season with salt and pepper.

I had leftover polenta (with parmesan) and leftover baked sweet potatoes. This was a great way to use them up. Adjusted ingredient proportions a bit, had already made the polenta with milk, added a little butter. This is a great recipe. Served it as the foundation for grilled sausage and caramelized onions.

So we have a company pot luck. Celebrating a co worker’s fiftieth birthday. I made this sweet potato Polenta. To go with the italian gravy with oxtails and short ribs. It was a hit. I made some small changes. I chose to use chicken better than bullion, premade polenta, sweet potato, half and half, Italian herb, garlic and onion powder. It came out wonderful. Thank you Chef Brown
