Ingredients
- 4 large plum tomatoes (about 1 1/4 pounds), sliced into 1/4-inch thick rounds
- Kosher salt
- 3 1/2 cups mini Cheddar crackers
- 4 tablespoons unsalted butter, melted
- 1 large egg
- 6 slices cooked bacon
- 2 1/2 cups shredded sharp Cheddar
- 1 1/2 cups mayonnaise
- 2 cloves garlic, minced
- 1 jalapeno, seeded and finely chopped
- Olive oil, for brushing
Instructions
- Preheat the oven to 375 degrees F.
- Lay the tomato slices on a wire rack over a baking sheet and sprinkle with 1 teaspoon salt. Let sit for 10 minutes to drain, then pat lightly with paper towels.
- Meanwhile, put the Cheddar crackers, butter, egg and bacon in food processor and process until well combined. Press the mixture into a 9-inch pie plate. Combine the Cheddar, mayonnaise, garlic and jalapeno in a medium bowl. Spread the mayonnaise mixture in an even layer in the crust and top with the tomato slices, overlapping them in a circle. Brush the tomatoes with olive oil and bake until the Cheddar is melted, the tomatoes are curling and the crust is starting to brown, about 45 minutes.

Looked pretty but tasted terrible!!!
If anything, this dish is closer to being a dip. Not a main dish. But even so, it was way too greasy. Maybe by cutting the Mayo with some plain yogurt would help.
On the surface it sounded great. Bacon, cheddar cheese, cheddar crackers, tomatoes. What’s not to like? I reduced the heat to 360 degrees, based on a prior review, and baked it a little longer. Looked awesome coming out of the oven. Everything seemed to be cooked perfectly. The problem is that it just tasted bad. I mean really bad. I hate wasting food and would have eaten it even if it had been mediocre. Wound up throwing it out. It was a complete waste of some relatively expensive ingredients
The prep time is ten minutes? In whose kitchen. It took at least 30 to get all the stuff even ready to go into the pie dish. When finished after a hugely long baking time of 45 minutes, the crust was burned on the bottom, grease was all over the place and the mostly edible portion was the filling of mayo and grated cheddar, something akin to hot pimiento cheese but no pimientos. It was disgusting at best and certainly not worthy of the expense of the ingredients or the time involved. Totally disappointed because the video looked awesome.
This is wonderful, I added a small jar of pimentos and about 2 qreen onions.

Between the crackers, the Kosher salt on the tomatoes and the cheese, this was WAY too salty. Deciding wether to keep the rest or throw it out. Would not make again.
Switched out 1 cup of mayo with plain Greek yogurt, added some basil – yummy! Will be taking this to an end of season BBQ next week!
