Sunny’s Margarita Pita Pizza

Ingredients

  1. 16 mini pitas
  2. 1 cup tomato sauce
  3. 16 bocconcini (mini mozzarella balls)
  4. 1/4 cup olive oil
  5. Fresh basil, for garnish

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Arrange the mini pitas on a parchment-lined baking sheet. Add about a tablespoon of sauce and a mini mozzarella ball to each pita. Drizzle some olive oil on top of each. Bake until the cheese is melted and bubbly, 8 to 10 minutes. Top with fresh basil.

Loved this recipe! Couldn’t find mini pita so I used regular size and let my picky eater kids build their own. They LOVED eating their creation. I’ll definitely make these again.

Very strange how fate intervenes. I have an unopened bag of  mini pitas in fridge which has been there for a month or so. Bought the whilst company visiting but they did not wish to eat. This a.m. cleaning out fridge and was about to toss bag. I turned on Food Network just as Sunny brought these out of oven so ran out to kitchen, grabbed ingredients, including pepperoni and popped in oven. Am sitting here in mini pizza delight, licking my fingers. This is a keeper.
