Sunny’s Easy BBQ Chicken Pizza

Ingredients

  1. 2 tablespoons olive oil
  2. 1 Vidalia onion, chopped
  3. 1 jalapeno, chopped
  4. Salt and freshly ground black pepper
  5. 1 clove garlic, minced
  6. 1 teaspoon Hungarian or hot paprika
  7. 1 teaspoon dried thyme
  8. 1 teaspoon dried oregano
  9. 1 cup ketchup
  10. 1/4 cup yellow mustard
  11. 2 tablespoons Worcestershire sauce
  12. 2/3 cup brown sugar
  13. 1 tablespoon white vinegar
  14. 1 rotisserie chicken, skin discarded, meat removed and chopped
  15. 1 (13.8-ounce) package premade pizza crust (recommended: Pillsbury Pizza Crust -Thin Crust)
  16. 1/2 cup shredded cheddar
  17. 1/4 cup shredded parmesan
  18. 8 ounces buffalo mozzarella, torn into 1 to 2-inch pieces

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a pot over medium heat add the olive oil, onions, jalapenos and a sprinkle of salt and pepper, to taste. Cook, stirring, until the onions are translucent and tender, about 10 minutes. Add the garlic, paprika, thyme, and oregano, then stir well and cook until fragrant. Add the ketchup, mustard, Worcestershire sauce, brown sugar and vinegar. Raise the heat to medium- high and simmer, while rapidly stirring, until everything is blended and smooth. Lower the heat to a simmer and add the chopped chicken. Stir to coat all the chicken, then remove from the heat and let cool slightly.
  3. Meanwhile, roll out the dough according to package directions and fit it onto a rectangular nonstick baking sheet. Put the crust in the oven and bake for 7 minutes.
  4. Remove the crust from the oven and leaving a 1-inch border pour the BBQ chicken and sauce evenly over the crust. Top with the cheddar, parmesan and mozzarella, in that order. Put the topped pizza in the oven and bake until the mozzarella cheese is bubbly and the edges of the crust are golden brown, anywhere from 6 to 11 minutes. Remove the pizza from the oven to a cutting board and allow to cool for a few minutes before cutting and serving.

I followed this recipe to the letter, and it was good, but a bit too sweet for me. Probably didn’t need that much brown sugar. I also had trouble flattening out the Pillsbury pizza dough. If I make this again, I’ll make it super simple by buying a pre-baked pizza crust and bottled BBQ sauce.

Tasty but way too sweet. Tasty enough to work at it: I will make this again reducing the sugar by more than half (tasting, of course). I wasn’t a fan of the Pillsbury crust, but using half or even 1/3 of the chicken mixture works better. I plan to try it on a Boboli as reviewer Cupcake suggests. We did part of the mixture on a cauliflower crust. Everyone liked that. Still kind of dessert-like.

YUM…My family loved this recipe…I used regular mozzerella cheese and didn’t even need all the cheese the recipe called for! I put 3 chicken breasts in the the crock pot in the morning and they were ready to be cut into peices for the pizza later that evening..the chicken turns out moist this way.This would be a great once-a-month recipe because it’s really sweet and rich..(even though I would eat it everyday..Pretty easy and VERY yummy!!! this turned out great, used regular mozzerella as that is what I had, also used a Boboli crust and it all turned out amazing. Unlike previous reviewer, thought it was very time efficient.

Another hit from Sunny! I used boneless chicken cut up small, and fried in olive oil with salt and pepper. I think I may make the sauce to bbq some chicken on the grill.

Loved this every bit of this. My first time having pillsbury pizza dough. It went great this dish and made everything so easy. The BBQ sauce was fantastic. This will always be on my list of party dishes. Big hit at our Superbowl Party.

If I may suggest a Super Quick Idea for this Pizza?store bought Rotisserie Chicken,your Favorite BBQ Sauce and a Colby~Monterey Bag of Cheese and fried up Onions.Pillsbury Crust as Sunny Says and then “Paint” the crust with BBQ Sauce, Lay on this, amount of Chicken You Want and Cooked Onions & Sprinkle with the Two Cheese Mixture. Bake same as Sunny’s. Fast and Almost as good as Sunny’s.
