Ingredients
- Two 13.8-ounce cans premade pizza crust dough
- 4 tablespoons olive oil
- 2 cups shredded mozzarella cheese (about 8 ounces)
- 2 cups shredded cheddar cheese (about 8 ounces)
- 1 bell pepper, cored, seeded, diced
- 1 red onion, chopped
- 2 teaspoons minced garlic
- 3 boneless, skinless chicken breast halves, grilled and diced
- 1/2 pound bacon, diced and cooked until crisp
- 1/2 pound bacon, diced and cooked until crisp
Instructions
- Preheat the oven to 350 degrees F.
- Press out the pizza dough to a 1/2-inch thickness and punch out rounds using a 3-inch biscuit cutter. Transfer to two baking sheets and brush the crusts with 2 tablespoons of the olive oil. Sprinkle with 1 cup of the mozzarella and 1 cup of the cheddar. Top with the bell pepper, red onion, garlic, chicken and bacon. Sprinkle the remaining 1 cup mozzarella and 1 cup cheddar over the pizzas and drizzle with the remaining 2 tablespoons olive oil. Bake until the crusts are lightly browned, about 25 minutes.

Thought this would be great for a lazy Saturday, with plenty of time to prep… but decided to go for it on an average Thursday night with my 8 year old helping! We loved the simple ingredients we had on hand and opted for rolled out biscuit dough. What a weeknight treat! So happy to have found this recipe! Leftovers my whole family will eat! Yum!
I used a rotisserie chicken to make these even easier. I also sauteed the pepper, onion and garlic before adding to the pizzas. They were really good but a bit tedious for a week night meal.
These are perfect for any occasion really. We made these from two pizza crusts (store bought). When they are baked we like them with a chewy bite and a light colored crust. My favorite toppings are the chicken, red peppers, cheddar cheese and the red onions. The cheddar cheese gives off a delicious pimento cheese like flavor from the red pepper and the red onions get caramelized. We actually grilled chicken that same day because we had the chicken thawed for something else and decided to grill them up in our cast iron skillet. Super Good!

I can’t wait to make these. Looks like you can add just about anything you have on hand. Indeed I would use left over ck. plus I always have Pepper Jack cheese think this would give it a little kick.
FABULOUS change from regular pizza. I bought one Pillsbury Thin crust pizza dough. I simply cut it into 6 rectangular pieces (easier than rounds) Used left over chicken breast (chopped) from previous night. I only used provolone cheese (all I had on hand) and no bacon. Everything else unchanged. We absolutely LOVED it. The crust was a golden crunchy delight with every bite. Next time I will add some sliced black olives too. The chicken added a wonderful flavor. I plan to make for my family again this weekend.
