Ingredients

  1. 1 head cauliflower, stalk removed
  2. 1/2 cup shredded mozzarella
  3. 1/4 cup grated Parmesan
  4. 1/2 teaspoon dried oregano
  5. 1/2 teaspoon kosher salt
  6. 1/4 teaspoon garlic powder
  7. 2 eggs, lightly beaten

Instructions

  1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Break the cauliflower into florets and pulse in a food processor until fine. Steam in a steamer basket and drain well. (I like to put it on a towel to get all the moisture out.) Let cool.
  3. In a bowl, combine the cauliflower with the mozzarella, Parmesan, oregano, salt, garlic powder and eggs. Transfer to the center of the baking sheet and spread into a circle, resembling a pizza crust. Bake for 20 minutes.
  4. Add desired toppings and bake an additional 10 minutes.

The first time I made this it came out perfectly, however, the second time I ran out of parchment and used tinfoil. Don’t do that. I couldn’t peel it off the foil! I’ll definitely will make this again…once I get more parchment.

I used a food processor then let the cauliflower drain a bit on paper towels. Then I nuked it with damp paper towels around it to steam. Cooled it, added ingredients, baked for 20 min and long story short, it came out wonderfully. This isn’t the kind of pizza you can pick up and it with your hands, so the “mushy” comments might be expecting that. I will use this recipe over and over.

I have a 500 g package of riced — is that about the same as a head? – a head is about double the weight w/o water removed.

I always add extra cheese and this time I added Jalapenos to the food processor to add some additional flavor. I am on a low carb diet so this is the only way that I can enjoy pizza. So amazing!

I was a little bit impatient and used a mini food processor instead of my large one but it honestly came out good when I fired this up in a 900 degree Ooni pizza oven. I will probably experiment with a few more spices next time and work with a consistency to make it more like dough probably pulverizing the mozzarella next time might also help
