Every time this pie is served, it is favorably received because it is both light and appealing. a perennial favorite! You can combine 1/4 cup each of fresh lemon juice and fresh lime juice to replace the key lime juice.

Ingredients

  1. 1 cup graham cracker crumbs
  2. 3 tablespoons white sugar
  3. 5 tablespoons butter, melted
  4. 3 eggs
  5. ½ cup key lime juice
  6. 1 (14 ounce) can sweetened condensed milk
  7. 1 pinch salt
  8. 1 pinch cream of tartar
  9. 1 cup heavy whipping cream
  10. 1 lime, sliced

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Mix graham cracker crumbs with sugar and melted butter. Press into 9 inch pie plate and bake for 5 minutes. Remove from oven and let cool.
  2. Separate 2 of the eggs, placing the two egg whites into a mixing bowl. Reserve the yolks in another bowl.
  3. To the yolks, add one whole egg, lime juice and sweetened condensed milk. Whisk until smooth. With clean mixer blades or a whisk attachment, beat the egg whites with salt and cream of tartar until stiff, but not dry. Fold whites into filling mixture. Pour filling into partially baked crust.
  4. Bake in preheated 325 degrees F (165 degrees C) for 10 to 15 minutes or until set. Let cool at room temperature, then freeze 4 hours to overnight. Just before serving, whip cream to form stiff peaks. Serve decorated with whipped cream and lime slices.

this is such an awesome recipe. At first I thought I would be the “chef” and squeeze 13 limes. After painful hands and wrists, I found a bottle of Key Lime juice at the grocery store.. MUCH EASIER! I like making the crust from scratch. It’s much tastier than the store bought one. I love eating this pie too!

The filling was great! I changed the crust, using 1 1/4 Cups crushed Mr. Christie’s chocolate wafers instead of Graham crackers and added 1 teaspoon cocoa powder. Suggest using additional egg whites to make meringue and bake the meringue with the pie, rather than using whipped cream after baking the pie.

Well, this is a keeper. In Canada, our sweetened condensed milk comes in 300 ml. cans (10.5 oz.), so I used 2 cans & added an extra whole egg. And, even though I had to use concentrated lime juice from a bottle, it turned out great. Took it to a family BBQ, where it was a huge hit.

I add some lime zest to the top of the pie before baking, it adds a little kick. I also do an Italian Meringue instead of whipped cream. Keeping it frozen until serving helps.
