Fresh Strawberry Pie with Orange Liqueur Glaze

I created this simple glaze to make a delicious fresh strawberry pie through trial and error and using what I had on hand; it’s almost as simple as opening a jar. Whip cream that has been sweetened and serve.

Ingredients

  1. 1 (9 inch) refrigerated pie crust
  2. 1 cup fresh strawberries, hulled
  3. ¾ cup water
  4. ¾ cup white sugar
  5. 3 tablespoons cornstarch
  6. 3 tablespoons orange liqueur (such as Grand Marnier®)
  7. 3 cups fresh strawberries, hulled

Instructions

  1. Preheat an oven to 400 degrees F (200 degrees C).
  2. Bake the pie crust in the preheated oven until puffed and golden-brown, 20 to 25 minutes. Remove to a wire rack and cool completely.
  3. Puree 1 cup of strawberries in a blender until smooth. Pour pureed strawberries into a saucepan. Stir in the water, sugar, and cornstarch. Bring to a boil over medium heat until thickened, stirring often. Remove from heat and stir in the orange liqueur. Set aside.
  4. Arrange the remaining 3 cups of strawberries decoratively in the prepared pie crust. Pour the glaze over the berries. Refrigerate until glaze is set, about 4 hours.

I made this pie and did use the Grand Marnier….It was a little too much for me, I thought it took over the tatste of the pie.

very nice!. Whipped cream required (the real stuff, not the fake stuff in the freezer). I enjoyed it so much that later I reduced the amounts and substituted raspberries to make a filling for the Italian Wedding cake recipe on this site. It was fabulous!

Absolutely wonderful! I didn’t have orange liqueur so I used orange juice instead of water and then added rum instead of orange liqueur. Just like a strawberry dacquari in pie form. This will be made again and again. Such a nice change from those pies that use gelatin for the glaze.

I was pleasantly surprised by this pie. It turned out very well, much better than expected. I might add a little more cornstartch next time because it was a little runny but had a great flavor! I will be making this again.
