We both adored anything black walnut. I made this one for him since black walnuts taste extremely different from English walnuts. With honey or caramel sauce on top, I prefer it.

Ingredients
- ¼ cup white sugar
- 2 tablespoons all-purpose flour
- ¼ teaspoon salt
- 6 tablespoons butter, melted
- 1 teaspoon coconut extract
- 3 eggs
- 8 ounces sweetened cream of coconut (such as Coco Lopez®)
- ½ cup milk
- 1 ½ cups shredded sweetened coconut
Instructions
- Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9-inch pie plate.
- Combine sugar, flour, and salt in a bowl. Add butter and coconut extract. Add eggs 1 at a time, mixing well after each addition. Add cream of coconut and milk. Add shredded coconut. Pour mixture into the prepared pie plate.
- Bake in the preheated oven until set, 45 to 50 minutes.
- Chill completely before serving, at least 1 hour.

I really like it and so does my family . I used about 11 oz. Of cream of coconut and half cup of evaporated milk instead of milk. It turned out perfect!
Way too much Coconut; and not enough custard…dry. I will reduce the coconut to 1 cup and use 1 can of condensed milk instead of the sugar and the milk and add another egg. I guess this equates to a different recipe…so be it.
I over baked it but still delicious. May not need additional sugar. Really Sweet.
I happened to have all the ingredients in my pantry and I’m so glad that I made this recipe. It took no time and it was so simple to make. My partner and I ate more than half of it when we pulled it out of the fridge. I’m sure rest will be gone by tomorrow so I will have to make it again!
