Chef John’s Peach Tartlets

Despite taste delicious, this fruit dip is really more nutritious than most fruit dips. It tastes very good with strawberries, but it’s also good drizzled over a bowl of raspberries, blueberries, peaches, etc.

Ingredients

  1. ¼ cup sugar
  2. ¼ teaspoon Chinese five-spice powder
  3. 1 egg, beaten
  4. 1 teaspoon water
  5. 2 tablespoons butter
  6. 3 large peaches, each cut into 8 wedges
  7. 1 (15 ounce) package refrigerated pie pastry

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with a silicone baking mat.
  2. Whisk sugar and Chinese five-spice powder together in a small bowl. Beat egg and water together in another bowl.
  3. Melt butter in a large skillet over medium heat. When the butter foams, arrange peaches in a single layer in the skillet. Pour sugar mixture over the peaches; cook, turning peaches once, until sugar is melted, bubbling, and syrup has a tan color, about 2 minutes. Transfer peaches and syrup to a bowl to cool completely.
  4. Cut pie crusts into eight 4 1/2-inch rounds. Set rounds on prepared baking sheet and fold edges of each crust up to form a 1/2-inch rim. Brush each crust with egg mixture.
  5. Place 2 peach slices, pit-sides facing each other, in the center of each tart. Place 1 peach slice in center, skin-side up, in between the other two peaches. Drizzle excess syrup over the peaches.
  6. Bake in the preheated oven until golden and bubbling, about 15 minutes.

The amount of peaches on recipe is enough for two pie crusts, not one pie crusts!

We think it was a 4-star recipe because the instructions were confusing, but it tasted wonderful. the Chinese five-spice was a great touch with the peaches. All in all, it was worth it

Two points: I used pears which worked fine and I had trouble finding the ready to use pie dough but found it at a local Giant. This is a rather easy recipe that produces a visually appealing and tasty dessert. It makes a reasonable left over in a microwave. I will be making it again soon!

This recipe was quite simple to prepare. I used my own pastry dough, which I prefer. I will make these again, but I’m not sold on the Chinese 5 Spice. The flavour was a little odd, so I’ll use cinnamon and maybe a bit of nutmeg next time. Really pinch the sides together or the circles will flatten.

It tastes great for as easy as it is to make. Make sure you fold over the lip as shown in the video or picture to hold back the juices. I flipped the edge up and pinched it together to for a rim similar to a tart pan. It went flat halfway through baking totally making a mess…batch number two was better looking.

Chef John has done it again. These are fantastic. I had to go to the Chinese items in grocery store to find the five spice powder. It made the tarts special.
