Basic Flaky Pie Crust

This straightforward yet remarkable dish yields juicy chicken that is ideal for any sauce or even just the pan drippings drizzled on top. Enjoy!

Yield: 1 pie crust

Ingredients

  1. 1 ¼ cups all-purpose flour
  2. ¼ teaspoon salt
  3. ½ cup shortening, chilled
  4. 3 tablespoons ice water

Instructions

  1. Whisk the flour and salt together in a medium size bowl. With a pastry blender, cut in the cold shortening until the mixture resembles coarse crumbs. Drizzle 2 to 3 tablespoons ice water over flour. Toss mixture with a fork to moisten, adding more water a few drops at a time until the dough comes together.
  2. Gently gather dough particles together into a ball. Wrap in plastic wrap, and chill for at least 30 minutes before rolling.
  3. Roll out dough, and put in a pie plate. Fill with desired filling and bake.

I have made this crust before and it is easy, flaky and perfect. Don’t be afraid to make this crust ! NOTE: if you use crisco sticks, they are NOT the same measure as a stick of butter. I am a dork and details matter (cue a big, floury face palm – LOL)

This is the same pie crust recipe my mom and grandma used and they both made the best pie crusts ever! My mom always had very cold hands and she said that was her secret to a flaky crust. I recommend keeping the shortening in the freezer and make sure the water is ice cold. It doesn’t hurt to dip your hands in ice water before handling the dough and handle the dough as little as possible. After my mom died, I made a pecan pie for my dad using this recipe and he cried because he said it was as good as my mom’s. That was best compliment ever!

I have used this crust several times. My only critique is use unsalted butter instead of shortening. When I use butter, consistently makes a smooth, easy to roll dough, resulting in a flaky, delicious crust. The only time I used shortening, the dough was unusable.

It seems flaky enough but I didn’t get a lot of it. I had to roll it out really thin to just cover my pie dish. Oh I did double it but I’m sure I doubled everything correctly.

The taste is good and the crust is flaky. I use butter instead of shortening. My only thing is I end up using a lot more water than 3T because the dough doesn’t stick together otherwise; I’m not sure why but it still turns out good.

I make baklava and this dough is worse to roll out. It sticks, it crumbled, I had to patch the pie together. Literally take chunks and smush them into the pan. Never again.
