Ingredients
- 18 full graham crackers
- 1/2 cup (1 stick) salted butter, melted
- 2 cups cold heavy cream
- 2/3 cup confectioners’ sugar
- 1 cup root beer, chilled
- 1/4 cup whole milk
- One 3.4-ounce package instant vanilla pudding mix
- 2 teaspoons root beer extract
- 7 maraschino cherries, stems on
Instructions
- For the crust: Preheat the oven to 350 degrees F.
- Place the graham crackers in the bowl of a food processor and process until you get fine crumbs. (This can also be done in a large plastic zip-close bag with a rolling pin.) Pour the crumbs into a large bowl. Add the melted butter and stir until evenly mixed.
- Press the crumb mixture into a 9-inch pie plate, gently packing them so they’re firm and in an even layer. If you go up and over the sides, that is fine. Bake the crust for 5 minutes; let it cool and then chill for 20 minutes.
- For the filling: In the bowl of an electric mixer fitted with a whisk attachment, add the cream and confectioners’ sugar and whip until firm peaks form.
- Meanwhile, in a large bowl, whisk together the root beer, milk, pudding mix and root beer extract until thick, about 2 minutes. Using a rubber spatula, gently fold 2 cups of the whipped cream into the root beer mixture until almost completely blended. Pour the filling over the chilled crust and smooth out with a spatula. Top the pie with the remaining whipped cream.
- Garnish with maraschino cherries and chill for at least 2 hours. Enjoy!

My family LOVED this pie! Had to order the Root Beer extract from Amazon which wasn’t a big deal. This pie was delicious. Had no issues with he pie setting up and followed the ingredients and steps exact although I did use a deep dish glass pie pan. Will be making this again for sure!
The root beer mixture didn’t set up for me either. I don’t believe substituting heavy cream for the whole milk would have made much difference since it was only 1/4 cup. Into the freezer it went! Now we will have frozen root beer float pie! I plan on adding the whipped cream topping and cherries prior to serving. I’m sure it will be very tasty since licking the spatula was delicious. I also purchased a good root beer extract on Amazon.
I made the version in her cookbook (which is much easier) for a church potluck and it was a BIG hit. Even better, my husband loved it. I love when he likes what I made and asks me to make it again. Bonus, that root beer extract I bought on Amazon will not be going to waste. Thanks Ree!

Made this for my brothers birthday. Everyone loved it! Insanely easy.
We just loved this pie! It’s a lot of “dense” crust and I did let it spill up and over the sides, it looked very much like the picture, easy to serve because it sliced and released from the pan beautifully. I left the cherries off, they weren’t necessary and my daughter was so anxious to try it she grabbed it from the fridge and had it on the table quicker than I could say “cherries” she also asked if she could take the rest of it home after dinner. Made it yesterday and it was delicious. The only thing I would change next time is to make more whipped cream – maybe 3 cups heavy cream and 1 cup confectioner sugar… after adding two cups to the filling, I didn’t have enough to cover the entire top!
***********WAAYYYYYYY TOO SOUPY. Something must be off on the liquid/too much milk. Will have to reduce by over 1/2 next time, otherwise the flavor is great.
I used cream for milk in the pudding. I also made the crust with crushed honey nut cheerios to make it gluten free. You could also use gluten free graham crackers but I did not have any.
I just popped this pie in the frig. It went together like a breeze. Taking a que from a previous reviewer, I subbed 1/4C cream for the milk in the pudding mixture & made sure I whipped the 2C cream to very stiff peaks. Of course, my husband & I had to have a sample. We liked it & we know our root beer-loving grandchildren are going to love it when we get together for a family dinner this evening.
