Cheesy Ham & Egg Hand Pies

Ingredients

  1. 2 tablespoons salted butter
  2. 7 large eggs
  3. 1 tablespoon chopped fresh chives
  4. Kosher salt and freshly ground black pepper
  5. 1 cup diced ham
  6. 1/2 cup shredded mozzarella
  7. 1/2 cup shredded Cheddar
  8. One 17.3-ounce box frozen puff pastry, thawed
  9. 2 tablespoons poppy seeds

Instructions

  1. Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
  2. Add the butter to a nonstick skillet over medium heat. Beat 6 of the eggs together in a bowl. When the butter has melted, add the beaten eggs and the chives to the skillet, then a pinch of salt and pepper. Scramble the eggs until cooked through, about 2 minutes. Remove from the heat and add to a bowl to cool slightly.
  3. Add the ham, mozzarella and Cheddar to the eggs and mix to combine. Set aside.
  4. Make an egg wash with the remaining egg and a splash of cold water in a small bowl.
  5. Lay out the sheets of puff pastry and cut into twelve 3-by-5-inch rectangles. Divide the egg mix among six of the puff pastry rectangles, leaving borders empty around the edges. Brush the borders with the egg wash and top each with another puff pastry rectangle. Using a fork, crimp the edges to seal. Transfer to the lined baking sheet. Brush the tops with the egg wash and sprinkle with the poppy seeds. Bake until golden, about 20 minutes.
  6. Serve hot and enjoy.

This is a family favorite. I have made it several times for both lunch and dinner – pairing it with a salad or vegetable side dish. Even my teenage son loves them! Only thing we do to adjust the recipe is leave out the poppy seeds.

These are great and come together easily! I used this recipe for brunch. I added marjoram to the eggs and topped some with poppy seeds and some of them with everything bagel seasoning. I did have filling leftover, but it didn’t go to waste!

A big hit for brunch! I used cooked breakfast sausage instead of ham. Didn’t have poppy seeds so substituted za’atar and everyone loved them. My only complaint is the volume of the puff pastry overpowered the filling.

These were fabulous! I omitted the poppy seeds, but made the rest exactly as written. My 20 yr old son didn’t like them, but he’s not much of a fan of puff pastry. I, however, love all things puff pastry! I will try reheating in the toaster oven at 350 tomorrow to see how they turn out.

These were delicious but like others, I had leftover filling. I also made 9 instead of 6 and they were just the right size. I will try warming the leftovers in toaster oven as there are only 2 of us.
