Ingredients
- 2 small Kirby cucumbers, cut into spears
- 1 large garden cucumber, cut into 1/2¿inch thick disks
- 1 red bell pepper, cut into 1-inch pieces
- 1/2 head cauliflower, chopped into 1-inch pieces
- 1 cup pearl onions
- 2 cups white vinegar
- 1 cup sugar
- 2 tablespoons yellow mustard seeds
- 1 tablespoon celery seeds
Instructions
- Mix the Kirby cucumbers, garden cucumber, bell pepper, cauliflower and pearl onions in a large glass jar with a lid.
- Put the vinegar, 1 cup water, the sugar, mustard seeds and celery seeds in large pot. Bring to a boil over high heat, and then use a funnel to pour the pickling over the vegetables to cover completely. Let cool to room temperature, then cover tightly and refrigerate for at least 2 hours before serving.
- The pickles will keep, refrigerated, up to 2 weeks.

Made up a batch of this and it is fantastic! Had to make an extra 1/2 bath of the brine though to be able to fill the jars. Great recipe!
There’s no salt in the recipe, yet so many reviewers said this is too salty. How could it possibly be?
This is like a bread and butter pickle. It’s not sour and dill, it’s supposed to be sweet and tangy.
Are people using salt instead of sugar? And why the heck would anybody do that and expect the recipe to turn out?
If you’re looking for a sour pickle, find a different recipe. Duh.

Folks, I’m confused. There isn’t any salt in this recipe?
2 people have mentioned they were too salty.. there is NO SALT in the recipe.. you use SUGAR…

I tried these pickles yesterday using half the salt and they were still way too salty. Maybe there is an error with the salt amount?
I was hoping for more reviews. I just made them yesterday and they were too salty. Maybe will improve with age, but I am going to try again since I have all the ingredients with half the salt. Will let you know how they turn out.
