Ingredients
- 1 pound medium shrimp (16/20 per pound), peeled and cleaned
- 2 pounds meaty white fish, like sea bass, boned, and cut into large dice
- 1 red onion, minced
- 1 piece ginger, peeled, minced
- 1 clove garlic, minced
- 1/4 habanero or Scotch bonnet, minced (no seeds or ribs)
- 1 celery rib, minced
- Salt and black pepper
- 5 lemons, juiced
- 5 limes, juiced
- 1 bunch cilantro, chopped
- 2 ears of corn, grill with husk on
Instructions
- Boil salted water. Have ice water ready on the side. Poach shrimp for just 30 seconds and cool in ice water and drain. Combine with fish and toss with onion, ginger, garlic, hot pepper, celery, salt, and black pepper. Allow to cool in the refrigerator at least 30 minutes up to 2 hours.
- Add juices and refrigerate 1 hour. Finish with cilantro and corn, check seasoning and serve in a martini glass.

Is ok…, but none of the ceviche , fish or seafood ceviches, call for garlic or Ginger and is better to use Jalapeno pepper, this is the one use in Peru,don not chop or grate it, remove seeds and put in a food processor( is call Green Hot Pepper Sauce) I always put it aside that way can be add it as you like , …. I live in Miami and There is a very large variety of Peruvian restaurant run for Peruvian family the authentic food is amazing, fresh seafood and prepare to perfection. that is why I made the correction.

I’ve never made ceviche before, so I was a little concerned, but this came out really well! I roasted sweet white corn rather than grilling it. I also only used 3 lemons and 3 limes because they yeilded a LOT of juice. The ginger added great sweetness to the dish. What a great, fresh, and healthy meal! Highly recommend it.
This was delicious and easy! The ginger really adds great flavor. I used frozen sweet corn and just defrosted it and added at the end. This was delicious and can be made with whatever pepper you like. I used a variety to add color.
