Penne With Vodka Sauce

Ingredients

  1. Kosher salt
  2. 12 ounces penne
  3. 3 tablespoons extra-virgin olive oil, plus more for drizzling
  4. 1 large shallot or 1/2 small red onion, finely chopped
  5. 1 28-ounce can whole plum tomatoes, crushed by hand
  6. 3/4 cup vodka (optional)
  7. 3/4 teaspoon red pepper flakes
  8. 1/3 cup heavy cream
  9. 1/2 cup grated parmesan cheese, plus more for topping (optional)
  10. 2 tablespoons chopped fresh parsley or basil

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 cup of the cooking water, then drain the pasta. Drizzle lightly with olive oil, toss and set aside.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the shallot and cook, stirring, until soft, about 2 minutes. Add the tomatoes, vodka, the reserved cooking water, 1/2 teaspoon salt and the red pepper flakes. Bring to a rapid simmer and cook, stirring occasionally, until slightly thickened, 12 to 15 minutes. Stir in the cream and simmer 1 more minute.
  3. Add the cooked pasta, the remaining 1 tablespoon olive oil, the grated cheese and parsley to the sauce. Cook, tossing, 2 to 3 minutes. Season with salt. Divide among bowls and top with more cheese.

Amazing pasta recipe and so easy… I usually add Italian sausage to add a little variety and protein. So delicious!

This recipe is different from the one originally published in the November 2012 issue.  The original called for only 1/4 cup of vodka, and it was delicious.  From reading some of the reviews, I think I will stick to the original.

Easy recipe which is a plus for my busy household. I did end of doubling the garlic, which I normally do for every recipe. I would also recommend doubling the entire recipe if you have a large family .

great recipe, i added more pepper flakes, left out the vodka and added some grilled salmon to give the dish a little extra something something… i’ll be adding this receipe to my book of recipes…

My husband and I love this meal, we make this at least twice a month! I definitely saute garlic with the onion and we add more red pepper flakes since we like things spicy. This recipe is so easy and 100% tastier than what you can buy in a jar.

Too Watery; next time, omit water, and add garlic.

This was good, and I will make again, but I think next time I will saute some garlic with the onion in the pan to give it a little deeper flavor. I will also try adding some mushrooms. Also, be sure to give the sauce plenty of time to reduce, or else it will be too thin. I used 12 oz of penne, as the recipe suggests, but there is plenty of sauce for a whole 14 oz box of penne so next time I will just boil the whole box.
