Creamy Ham and Penne Pasta

Zesty diced tomatoes, ham and peas combine with penne pasta in a creamy sauce

Ingredients

  1. 8 ounces dry penne pasta, uncooked
  2. 1/2 cup frozen green peas
  3. 1 can (10 oz each) Ro*Tel® Mild Diced Tomatoes & Green Chilies, undrained
  4. 1 pkg (8 oz each) 1/3 less fat cream cheese (Neufchatel), cubed
  5. 1/2 cup shredded sharp Cheddar cheese
  6. 3/4 cup chopped fully cooked lean ham

Instructions

  1. 1. Cook pasta according to package directions, omitting salt; add peas last 2 minutes of cook time. Drain; set aside and keep warm.
  2. 2. In pan used for pasta, combine all remaining ingredients. Cook and stir over medium heat until cheese melts and mixture is bubbly. Stir in pasta and peas.

Quick and easy meal! Added some onions to the ham to brown them and release some more flavor. I also used the regular rotel tomatoes and chili’s. Gave it more of a bite! Could benefit with some freshness so will add some fresh herbs next time (parsley and basil).

We had leftover ham and fettucine in the fridge, so I did a search on those two ingredients, and found this recipe. It was AWESOME!!! We used the regular rotel and it was perfect. Also, for the ham, I used some leftover “Honey-Baked” ham that I had fried or sauteed in a skillet to crisp it up. The sweetness of the ham complimented the tanginess of the rotel and it was great. I would never have imagined that these ingredients together could make something so tasty. We will definitely keep this recipe in our favorites! Thanks Food Network for having such great recipes available!
