These crunchy little cookies are a satisfying alternative to regular peanut butter cookies. Chia seeds are a great source of omega-3 fatty acids – look for them in specialty health food stores if you don’t see them in the regular grocery store.

Ingredients
- Nonstick baking spray
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat or white whole wheat flour
- 1/4 cup rolled oats
- 1 tablespoon wheat germ
- 2 teaspoons chia seeds, optional
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground cinnamon
- 1/3 cup creamy natural peanut butter
- 1/3 cup packed light brown sugar
- 3 tablespoons vegetable oil
- 1 large egg white
- 1 ounce bittersweet chocolate, melted (about 2 small squares)
Instructions
- Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking dish with aluminum foil with a 1-inch overhang on all sides. Spray lightly with baking spray.
- Combine both flours, oats, wheat germ, chia seeds if using, salt and cinnamon in a medium bowl. Set aside.
- Combine the peanut butter, brown sugar, vegetable oil and egg white in another medium bowl. Beat with a hand mixer until creamy, about 2 minutes. Add the dry ingredients and beat on low until a wet and sandy mixture that holds together when squeezed. Turn the dough out into the prepared pan and press into an even layer. Bake until golden, 25 to 30 minutes. Let cool completely. Drizzle with the chocolate. Let the chocolate harden and break into eighteen 2-inch even pieces.

This is NOT a keto recipe
Like the others on here, I baked for 20 minutes instead of 30 and these turned out perfect. That’s the only reason for a star deduction. This high fiber, low fat “cookie” is absolutely great to satisfy cravings and not feel guilty. I used more chia seeds (2 tbsp) because I like the crunch they give. Perfect balance of salty, nutty, and sweet. Not over powering in any of the flavors. These are a bit dry and crumbly, which I like. If you are looking for a super crunchy or chewy dessert you’re going to want to look elsewhere.
Dry as a bone – followed the recipe except didn’t have wheat germ. I have no idea where these good reviews are coming from. These are like VERY dry granola bars with almost no flavor and have a bit of a cardboard-y texture. Almost no peanut butter taste and the amount of chocolate they recommend is laughable. My husband wouldn’t eat them and he eats any kind of dessert – especially if contains peanut butter! Dipped in coffee or hot chocolate is the only way these might be palatable. Sadly, I threw them away.
We really liked this recipe. Lots of flavor. Kind of like an “up-scale granola bar”. I opted out of the flax seed. I added the whole egg because we’re not watching our cholesterol. It came out crispy and broke easily once totally cooled.
Didn’t turn out the way it looked in the picture. It is not hard is breaks apart like sand. Add lots of chocolate on top. My mom likes the top part.

As with other reviews, cook for only 20 minutes. i found it to be needing depth so i baked some apples in a bit of brandy and then put the peanut butter thins on top of it. my guests really liked it
I made these with flax seeds instead of chia, and crunchy instead of creamy peanut butter. But they were really good. I would cook them for only 20 minutes because after 23 i took them out a little overdone. But good anyway!!
These cookies were delicious!!!! Specially since I added Ch Ch Ch Chia Omega-3 Chia seeds and I finished quite fast since I used my super handy Pogo Whisk which I got from Joseph Enterprises!!!! I totally recommend this product specially if you use the Chia Omega-3 Chia Seeds!!!!
Yummy & addictive! Just the right level of sweetness. Will definately make again. I only needed to bake for 20 minutes. I used “whipped peanut butter” because that’s what I had on hand and as I said above, it turned out great! The chia seeds add a really nice extra little crunch.
