Peanut Butter Protein Bars

Ingredients

  1. 2 cups chunky peanut butter
  2. 1/3 cup honey
  3. 1/3 cup chocolate milk
  4. 2 1/2 cups rolled oats
  5. 1/2 cup flax seeds
  6. 2 tablespoons chocolate protein power
  7. 1/3 cup dried cherries
  8. 1/2 cup mini chocolate chips

Instructions

  1. Line a 9-by-13-inch glass pan with parchment, letting it hang over the sides. Set aside.
  2. Combine the peanut butter, honey and chocolate milk in a medium heatproof glass bowl and place over a pot of simmering water. Allow the mixture to become warm and smooth, stirring to completely incorporate. Remove from the heat and set aside.
  3. Meanwhile, mix the oats, flax seeds, protein powder, dried cherries and half of the chocolate chips in a large bowl.
  4. Pour the peanut butter mixture into the oat mixture and stir until well combined. Transfer the mix to the prepared pan and press the mixture into an even layer. Sprinkle over the remaining chocolate chips, lightly pressing them into the base, and freeze for 15 minutes to allow the mixture to set.
  5. Remove from the pan and cut into 24 bars, then transfer to an airtight container and freeze.
  6. When ready to eat, remove from the freezer and allow to thaw slightly, 2 to 3 minutes, before enjoying.

I made these today, great peanut butter flavor, but it needed to be slightly a bit more wet ingredients! Too crumbly, I see why it says to keep frozen, I will be adding more of one of the wet ingredients next one, I also wish they had nutrients Values. Loved, loved the flavor! ❤️❤️❤️

Taking everyone’s comments to heart. They’re good, easy to make. Mine came out very moist. Think I added to much extra peanut butter. They’re also very rich. A few things I did wrong. Didnt let the peanut butter mixture cool enough so all the choc chips melted. They’ve been individually wrapped and put in freezer. They will get eaten eventually.  Honestly dont know if I’d make them again but I have all this flax seed and a ton and a half of protein powder leftover

Great flavors. Only reason for 4 out of 5 stars is due to the recipe needing more moisture. Instead of protein powder I added 11 oz of a chocolate protein shake. Yum!

This recipe is great! Easy to make and so tasty! I think I was a bit heavy on the dry ingredients, as I also added chia seed and some vanilla granola that I had available. Made the bars a bit crumbly, but still so good. Next time I will just make sure I have more of the peanut butter mixture!

When calculating calories, look up the calories for each ingredient, add them all up and divide by the number of servings you cut them into.  Easy!
