No-Bake Peanut Butter Bars

Ingredients

  1. 2 sticks salted butter, softened, plus more for greasing the pan
  2. 1 cup chunky peanut butter
  3. 2 cups powdered sugar
  4. One 12-ounce box vanilla wafers
  5. One 12-ounce bag mini semisweet chocolate chips
  6. 2 cups semisweet chocolate chips
  7. 1/2 cup creamy peanut butter
  8. 1/2 cup chopped peanuts

Instructions

  1. For the filling: Grease a 9-by-13-inch pan with some butter.
  2. Using a stand or electric hand mixer, mix together the butter and chunky peanut butter until smooth. Stir in the sugar a cup at a time.
  3. Add the vanilla wafers to a food processor and process until they are in crumbs. Then add the crumbs and mini chocolate chips to the peanut butter mixture. Spread it evenly into the buttered pan and set aside.
  4. For the frosting: Using a double boiler or a microwave, melt the chocolate chips and creamy peanut butter. Allow to cool for a couple of minutes, then pour over the base. Spread the frosting out evenly and sprinkle over the chopped peanuts. Refrigerate for at least 1 hour, then cut into 20 bars.

When she adds the ‘2 cups’ of chocolate chips to the dough, the ingredient list says 1-12 oz bag. Which is not 2 cups. So I am going to do the 1.5 cups not the 2.

These were really good. Cross between a bar and candy, rich. I lined pan with non stick foil so I could pull out of pan easy which made for easier cutting. Having celiac I bake gluten free, so I was not able to use vanilla wafers. Used gluten free graham cracker crumbs-2 cups for base and  1/4 cup for sprinkling on top mixed with a little cinnamon. A little sweet, I think it is combination of sugar, mini chips and graham cracker crumbs ( or vanilla wafers) in base. Wonder if using dark chocolate for topping would cut the sweetness, will try that next time. May cut back on sugar too. The sweetness didn’t stop me from eating them though.  Used creamy peanut butter for base and topping. Yummy. Great treat for peanut butter/chocolate lovers.

These are fantastic! My 10 and 12 yr olds made them this week. We only have creamy peanut butter; tossed in a handful of crushed peanuts to simulate crunchy. Sprinkled a little kosher salt on top. Amazingly good and simple.
