Level: Easy
Total: 1 hr 30 min
Active: 30 min
Yield: 32 buckeyes

Ingredients

  1. 1 cup peanut butter
  2. 1 teaspoon vanilla extract
  3. Pinch kosher salt
  4. 1 cup confectioners’ sugar
  5. 3/4 cup chopped toffee candy bars, such as Heath (3 bars)
  6. 12 ounces semisweet chocolate, chopped

Instructions

  1. Combine the peanut butter, vanilla and salt in a large bowl. Beat with an electric mixer, adding about 1/2 cup confectioners’ sugar at a time, until all the sugar is incorporated and the mixture is stiff and dry to the touch. Mix the toffee by hand.
  2. Roll the mixture into 1-inch balls (about 32) and place on plates. Insert a toothpick into the center of each ball and freeze until firm, 1 hour.
  3. Once the balls are frozen, put the chopped chocolate in a small, heat-safe bowl. Set the bowl over a saucepan filled with 1/2 inch of barely simmering water (make sure the bottom of the bowl does not touch the water) and heat, stirring, until melted. Remove the balls from the freezer and, one at a time, dip them in the chocolate, leaving a small round of peanut butter still visible. Let the excess chocolate drip off before returning the balls to the plate. Refrigerate until ready to serve. Remove the toothpick before serving.

I’m sure these will be delicious but it’s a sticky mess to make. This recipe calls for one cup of confectioners’ sugar and other recipes call for 2 1/2 cups. I wonder if more sugar would make the mixture stiffer. Of course I don’t want super sweet peanut butter.

Best buckeyes I ever had going to make two batches more so I don’t run out

I have been making these since I saw the episode. These are a fan favorite with my group of friends. I make them when we go camping. I have started making two batches, because one doesn’t last very long.

Scrumptious. We loved the addition of the toffee bits. They were a big hit this Christmas.

My son is highly allergic to peanuts so I substituted cashew butter. OMG…delicious!! Yes, cashew butter is a bit pricey, but it is worth the switch. I made them for a cocktail party.

Can I use chocolate chips melted to dip the balls in?
