Taco Spaghetti Bake

On a steamy summer day, frozen daiquiris are a fantastic way to cool off. A frosty drink treat can be made by blending rum, sugar, triple sec, and lime juice with ice.

Ingredients

  1. 1 (8 ounce) package spaghetti
  2. 1 ½ pounds ground beef
  3. 1 (1 ounce) package taco seasoning
  4. ¾ cup water
  5. 1 (15 ounce) can corn, drained
  6. 1 (8 ounce) jar taco sauce
  7. 1 (10.75 ounce) can condensed cream of chicken soup
  8. 1 (8 ounce) container sour cream
  9. 2 cups shredded Cheddar cheese, divided
  10. 1 cup tortilla chips, crushed

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
  2. Bring a large pot of lightly salted water to a boil. Cook spaghetti in boiling water, stirring occasionally, until cooked through but firm to the bite, about 12 minutes. Drain and transfer pasta to prepared baking dish.
  3. Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir in taco seasoning and water; simmer until thickened, about 5 minutes. Add corn and taco sauce; cook and stir until heated through, about 5 minutes more.
  4. Combine cream of chicken soup, sour cream, and 1 cup Cheddar cheese in a bowl until evenly mixed. Spread mixture over spaghetti. Spread beef mixture over sour cream mixture and top with remaining 1 cup Cheddar cheese and tortilla chips.
  5. Bake in the preheated oven until cheese is melted and bubbly, about 30 minutes. Allow to cool for 5 to 10 minutes before serving.

Turned out delicious! My teenager tore it up! I was skeptical at first but omg we will be making it again! I stuck to the recipe except for added more cheese and tortilla chips.

My teenager and I were a bit skeptical at first when we mixed the cream of chicken with sour cream combo – but it turned out to be really delicious! Next time we’re going to ditch the corn (personal preference) and use a spicy taco mix to give it a little kick. Definitely a keeper!

The only substitution I made was using black beans instead of corn. It was creamy and tasty but a bit too mild. Since one ounce of taco seasoning is what is typically used for one pound of ground beef when making tacos, next time I make I will use 1/1-2 ozs (3 tbsp). Also, if you like a lot of crunch on top, don’t stop with one cup of crushed tortilla chips!

Whoever made up this recipe and posted it should’ve mentioned that they have no idea what a good home cooked casserole is supposed to taste like and that they likely grew up eating generic brand Mac N Cheese out of the box. Although I think the Mac N Cheese is probably a step up. $30 not well spent.

I did make a few changes. I put in salsa instead of taco sauce. I also substituted black beans instead of the corn. Never have liked corn and hamburger cooked together. I made my own cream of turkey soup as I cannot use canned soups. I did not have chicken bone broth available and I did have turkey . It was quite tasty- even the leftovers warmed up well

This casserole is as good as it gets. I was leery of using noodles in a Mexican flavored dish but it just works. I took the advice of another reviewer and used elbow macaroni. It’s just sooo yummy!

I followed the recipe but used elbows instead of spaghetti. I just thought it would be easier to eat. It seemed weird to add cream of chicken soup to a mexican recipe but it was so good. You definitely need to try this recipe if you haven’t already! Loved it!!

This was pretty good. Not as “kid friendly” as I had hoped. 1 out of my 3 liked it, but that is not unusual. It was an interesting combination of foods coming together. I made as is and thought it just tasted like tacos over spaghetti. My husband loved it. He loves any casserole dish.
