This delicious macaroni and cheese dish has a beautiful brown panko topping and cauliflower florets baked into it.

Ingredients
- Cooking spray
- 1 ½ cups bite-size cauliflower florets
- 1 (6 ounce) box Horizon® ClassicMac™ Pasta Shells & White Cheddar Cheese
- 4 tablespoons unsalted butter, divided
- ½ cup reduced fat milk
- 2 ounces cream cheese, at room temperature
- ⅓ cup shredded sharp white Cheddar cheese
- ⅔ cup panko bread crumbs
- ½ teaspoon salt
- ⅛ teaspoon ground black pepper
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Spray a ceramic or glass baking dish with cooking spray.
- Bring a pot of water to a boil. Add cauliflower florets and boil for one minute. Remove with a slotted spoon.
- Cook pasta shells in the same water, following instructions on the Horizon package. To the drained pasta, add 1/2 cup milk (instead of 1/4 cup as shown on the package), 2 tablespoons butter, and packet of cheese powder.
- Stir in cream cheese and Cheddar cheese; mix well until combined and cheese is melted. Add cauliflower and mix. Season with salt and pepper, if desired.
- Spoon macaroni and cheese into prepared baking dish. Smooth out the top.
- Melt 2 tablespoons butter. In a small bowl, mix together panko breadcrumbs, melted butter, salt and pepper. Sprinkle over the top of the macaroni and cheese.
- Bake until the breadcrumbs are golden brown, 15 to 17 minutes.

i loved it
I did a couple things different. But this is wonderful my entire family loved it. Instead of baking I just made it in a pot on stove. I used sour cream instead of cream cheese but I will try the cream cheese next time. I also made the Panko on the side and sprinkled it on top of the plates once dishes up.

Big hit with my family. I modified the recipe a bit based on what I had in the kitchen. I used buttermilk instead of regular milk and reduced the cream cheese. I also used riced cauliflower.

I’m a total newbie chef and when I came across this recipe, I saw everything I liked. I did add garlic powder and paprika to my batch to make it a little more flavorful. But this is a great base to start with. This also tastes amazing when you reheat it. I’m definitely going to keep making this one!
This turned out great! I put Sriracha on it and it was even better!
Final outcome didn’t look exactly like the photo. Also make sure you use an 8×8 or smaller pan. I used an 8×8 and the recipe didn’t feel even– as if I should’ve gone with a bit smaller pan. Recipe tasted good but again for adding the cauliflower it still seems like a fairly unhealthy recipe.
