A very simple recipe for lasagna without noodles! For a supper that is incredibly flavorful, baking mix is used in place of spaghetti. Add a salad, and you’re finished! creates a quick meal that even children can assemble!

Ingredients
- 1 pound lean ground beef
- 1 (6 ounce) can tomato paste
- ½ teaspoon salt
- ½ teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- ⅓ cup grated Parmesan cheese
- ½ cup cottage cheese
- 1 cup milk
- 2 eggs
- ½ cup biscuit baking mix
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Crumble the ground beef into a large skillet over medium-high heat. Cook and stir until no longer pink. Drain and stir in the tomato paste, salt, and Italian seasoning. Set aside a little bit of the mozzarella and Parmesan cheeses for the top; stir the rest into the ground beef. Set aside.
- Spread cottage cheese into the bottom of a 9 inch pie plate. Spoon the ground beef mixture over the cheese. In a small bowl, stir together the milk and eggs. Blend in the biscuit mix until smooth. Pour over the top of the pie, covering completely.
- Bake in the preheated oven until top is browned, about 30 minutes. Remove from the oven and sprinkle the reserved cheese over the top.

I replaced the cottage cheese with skim ricotta, used venison instead of beef and also added the following veggies to the meat: onion, red bell pepper, zucchini, and garlic. It didn’t fit in a pie pan, but was FABULOUS!!! I will make this again for sure!

This was very easy & quick to make. My kids really liked it but I thought it needed more seasoning. Next time I will add some veggies like the other review suggested and extra seasoning like garlic & more salt. Or maybe some canned tomatoes.
It was tasty and quick and easy to make. I did however miss the lack of pasta. I will try to modify it next time and instead of using the biscuit mix, I will try mixing in egg noodles. I got that idea from the “pizza casserole” recipe.
I was going to give this four stars, but my kids wouldn’t let me. They really loved this. However, the proportion of milk to biscuit mix is too high; use less milk, maybe 1/2 cup. Also, I added chopped onions, green peppers, zucchini and mushrooms to the ground beef as it cooked. It was a great way to sneak some veggies into my kids and added more flavor to the pie.
